My Welsh Cake Recipe! Easy, Traditional & Delicious!

- Is it a cookie? Is it a scone? Is it a pancake? No! It’s a Welsh cake! In this episode, I share my traditional Welsh Cake recipe with you! These gorgeous little tea time treats have such a unique and distinctive texture and taste!
The mixed spice adds a lovely warmth and sweetness with just a hint of savouriness. The process of rubbing the fats into the flour gives the cake a flakey layered texture. And the currants add the perfect amount of resistance in each bite.
Every Welsh person I’ve had the privilege of meeting here in the UK has been incredibly passionate about their country, as they should be! It’s a green and lush place, with beautiful beaches and stunning mountains. It may be a small country, but it’s a gorgeous one.
The celebration of St. David’s Day is a colourful one, filled with yellow daffodils, green leeks, and lots and lots of these delicious little cakes!

INGREDIENTS
225g plain flour
85g caster sugar
½ tsp mixed spice
½ tsp baking powder
50g butter, cut into small pieces
50g lard, cut into small pieces, plus extra for frying (use butter if you don’t want to use lard)
50g currants
1 egg, beaten
Splash of milk
MIXED SPICE RECIPE
1 tbsp ground cinnamon
2 tsp ground allspice
2 tsp ground nutmeg
1 tsp ground cloves
1 tsp ground ginger
1 tsp ground coriander
¾ tsp ground mace

Glad you stuck to the traditional ingredients - lard seems to scare people for some reason, I don’t know why. The only part I would vary slightly is the rubbing in. I generally start by rubbing just the flour and fat then stirring in the other ingredients. You got a great result though, and the sugared baking sheet, and not overcooking were great tips. Full marks.

I did think it was very important to make these as traditional as possible, using traditional ingredients. Even the griddle I used was given to me by a friend who lives in Wales! Thanks again! 💖😻

They are soooo yummy! The first time I ever had them was when a coworker brought me some to try on St David’s Day, so I always associate them with the 1st of March :) 😻😻

Then we tried to see puffins on Skomer, and we stayed near a castle called Carew. But my first two videos are: one about me learning how to pronounce the Welsh alphabet (Being taught by an 11-year-old), and the next is about visiting Ian‘s cousin who owns a farm with adorable pet sheep! 🐑
When are Son’s coming to visit in July, I’m hoping we can take away trip to Wales with them.❤️

They're amazing!! I can't believe I'm going to say this, but I bought some Welsh cakes last month whilst on a weekend break to Barmouth; mine were better! That said, I did buy more cakes from Aberystwyth and those were much closer to mine in terms of flavour, as well as being covered in sugar! 😻😻

Very very interesting. Could we use raisin if no currants?
They are very different from anything else I’ve ever had before! So delicious! Yes, you could use raisins, or mixed dried fruit, or mini chocolate chips! Some people like them plain with a bit of jam on top! It’s nice that they are so adaptable 😻😻
