You're interchanging the words cellar, with a shelf or rack. A wine cellar is room, typically underground, with reduced humidity and temperature control. What you have made is a really cool looking wine rack.

Since it looks like your bottles go far enough into the rack, I would highly recommend installing a tinted glass door to keep out as much UV and heat from the adjacent window as possible. UV + wine = no bueno.

You're 100% correct and that location is probably the worst place to put a wine rack (near a lit window next to a wall that will heat up during summer.) If they drink all their wine right away not a problem. Mostly, people that have this kind of storage drink cheap crap wine as wine enthusiasts wine buy at very good vintage that's young and cheap and let it age in a proper wine cellar.

thats not a Wine Cellar, a Wine Cellar is a room underneath the mainfloor of your home or sometimes on the same floor. In this Room is a different Temperature and Humidity than the other Rooms of the House. So you only build a Wineshelf wich still looks great.
The look on her face when she first saw it was awesome to see. It makes me happy that you love your wife so much that not only do you think to surprise her, you can give her exactly what she wants even when she didn’t know. Congrats on the great build at all levels.

Looks awesome. As a sommelier, I will say this is a far from ideal place to be keeping wine, but it does look pretty great!
an upgrade next time she goes outta town would be a wine chiller where the lower cabinet sits and you could still top it with a countertop
Very nice design. Your bottles are slightly tilting down and that's good, keeps the cork fully submerged (if cork it is though). I'd add that ideally you want to protect the wine from direct light and/or heat so avoid placing such a shelf close to a window south-someting oriented. Even if you're not ageing your wine: direct sunlight can cause big damage even on short periods. If you are in such a case, well, and I'm sorry to bring the bad news, you'll have to drink every day - for the wine's sake.
(Taking the occasion to self-reflect about my previous wine cellars designs I realize all of them forced me to open a bottle every day even the ones in shady basements?)

I was going to mention the light and heat as well. Looks like a horrible place for it. Maybe, with extra insulation and a colored glass door to block the harmful UV.

Love this! Your wife is very lucky. As comments have said, some tinted glass would definitely be a good idea to keep the wine from turning to vinegar. Also, hope you feel better soon! It sounds like you may have a bit of a cold or some allergies going on and that always sucks.

this is a pretty nice little wine storage rack you've made. Not sure why you called it a wine cellar since a wine cellar is supposed to be climate controlled but it's still pretty nice

Dados are across the grain, grooves with and rabbets are on the perimeter. But the joint name you're looking for on those wine holders... half lap... half lap.
I would like to give you some hint.
Wine doesn't love so much sun, so maybe that position is not the better one.
another hint: some type of wine need to be positionated with the cup lower to guarantee that the cork stays wet

I love the nook cabinets, love the wine storage and it looks great. Btw what stain did you use? I think 🤔 if you built the lattice separate as in get a general idea of spacing (how many bottles in total you want to hold and what the cabinet space will allow) then set up a spacer for consistent dados on the table saw you’d get through it quicker and with less headache. Then glue up, rip the finished lattice to the LxH size and wrap the lattice work in trim before setting it into the cabinet. Then no screws are showing outside the cabinet which I get in this case walls are hiding fasteners on the side but I think it’d be the easiest and plus copying the second lattice structure would be easy because you’re set up to make it repeatable

So that the bottle doesn't slide off the back timber and smash, the commercial versions of this style wine rack have a wire or timber inside to support the bottles or avoid the supports being too far apart.

I hope that you have a plan to install a refrigerator unit somewhere within the unit to "Chill" the wine for your wife and her friends, as the way to keep good wine is Chilled not room temperature or heated up from the sunlight coming through your window.

Every woodworker should have a set of Uncle Bill's Sliver Grippers either in the shop or on your keychain. They make great gifts, too! I discovered them when I was a machinist back in the 80s and still have the original set my old boss gave me. Check 'em out on the big A. They're like 8 bux. Great project!

It's good but your openings for the bottles are WAY too big. You could have done half that size and then you would have had more spots for bottles too.
