      Ngayon ko nalamang pwede palang gawing tea o tsaa ang cacao husks which we usually throw away.

    After 3 or more days air dying d tablea there appears white thing like molds but rubbing it disappear. How to prevent that?

      The rubbing on the net should prevent the white molds from happening. One of the reasons why the molds form is because there’s still mucilage around the bean. The other reason is moisture in the area baka di properly heated ang area or damp😊

    Does the vinegar taste different? Any hint of cacao/chocolate flavor?

      We haven’t really tried it. Some say sweeter maybe because of the sugar content from the pilp but definitely no hints of chocolates 🍫

    whats the difference between fermented and unfermented cacao beans??

      Hi Patricia😊 Thanks for the question. The main difference between these beans would be their taste. The post harvest process of fermentation allows for the cacao beans to develop flavor profiles and flavor notes that bring out more tasty chocolate 🍫. Unfermented cacao beans will typically have a flat flavor profile. Hope we’ve answered your question.

      @@cacaocultureph I can't imagine why anyone would prefer to use the unfermented bean. Bakit kaya? Ayaw nila ng better flavor?

      @@oxoelfoxo For farmers it's a mix of habit, lack of training and understanding of the fermentation process, and the reality that it can be sold in a shorter amount of time.
      For processors, habit (nakasanayan na), lack of understanding of bean quality, flavors (kasi they are not exposed to it), the cacao beans available to them in the market.

    Hi po. Gusto ko po mag start mag tamin ng cacao .pwede po ba po bumili sa inyo ng seedling? Tag tanay rizal po ako. At anung variety ang magandang itanim? Salamat.

      Hi Ronnie we stopped selling seedlings in 2019 to focus on farm operations and production. And we are base po sa Davao City which might be too far away / expensive to bring seedlings to your area

      you can search for it po online, it's called cocoa oil press machine.

      @@cacaocultureph ma'am thank you for responding po. May tanong po ulit ako. Kasi na curious po ako sa cacao tea, na galing sa shell. Yung shell po ba galing sa roasted cacao? Diba po maitim na yun.?

      Yes shells from roasted cacao. pero not all beans kasi are properly processed so amin we have strict protocols on roasting and winnowing to separate the shells. Then we further process it to decontaminate it for tea processing.
      If you want to try and experiment make sure to try and steep roasted shells from properly fermented beans.

      In our professional opinion, I will always choose and recommend to use fermented beans you can check our video czcams.com/video/VF4i-EEvWx8/video.html for the reasons why.
      Pero I would also like to mention that it depends po kung sino ang market ninyo. If your market / customers are in a region or area na nakasanayan that their tablea comes from unfermented beans then you can try and experiment for both to see ano preference nila. I believe that market really dictates kung ano gusto nila so again depends po sa market ninyo.

      Hi po ma'am and sir! If you recommend Fermented cacao beans for tableya making, then, how about the Unfermented po? When do you recommend it po?

      If you have access to criolo variety beans, ok parin po ang taste even without fermentation. This is the old/rare variety that was brought to the Philippines.
      Historically nasanay po talaga tayo sa unfermented cacao beans being used as Tablea dahil po ang beans are from this variety. Kaso lang po due to the introduction of newer variety and chocolate making process na develop na ang need for fermentation.
      Regionally in the Philippines meron talaga areas na ayaw nila ng lasa ng fermented beans dahil maasim for their taste or di sila sanay dahil iba na ang nakasanayan nila dati. Again market preference po.
