  • Here is one way to use powdered eggs to make hard boiled eggs. This wold be very convenient in difficult times with the grid down and no fresh eggs available.

    I never would have thought of this in a million years! I'm wondering if you can dehydrate or freeze dry egg whites and egg yolks separately, and then have a bit more versatility that way?

      That was my question as well. Freeze drying them separately then gingerly adding them back together to get the hard-boiled egg.

      I wondered the same thing. I suspect, however, that the yolk will not come together the way the albumen would, so you'd just end up with a soupy mess.

      My idea is freeze dry whites separately then freeze dry whole scrambled eggs with extra yokes added so there is more yoke flavor and poach separate. Chop and mix in after cooking.

    I know your intention for your butane stove was for us to see what you are doing easier. But an added benefit is that you are showing how to cook in a “grid down” situation. My camping butane stove is my emergency backup fuel but I have never camped or taken out of the box, lol. I’m going to try this weekend. Also, you sound like you are getting over a cold. I hope you have a speedy recovery! Thank you for all you do!

      The Bougie: When you do open your butane stove, you also need to get a portable carbon monoxide detector and and keep the windows open if inside. Pam is has a cold is up and down. Jim

      Yes! A professional Carbon monoxide detector help us last year during the Texas winter storm. People were dying in the cold and roads were frozen. There was NO RELIEF when the power grid went down and our heat source is from a propane tank.
      It’s too dangerous to run gas stoves for heat (carbon monoxide poison has no odor.). Thankfully Hubby is in the a/c & heating business and had a professional carbon monoxide detector. We ran heat from our propane stove but kept a very close eye on that detector while we did.
      That meant we could only run the heat for very short periods of time, but it was far better than nothing at all. People were dying in the cold.

    I've done an egg loaf in the instant pot. Mix up 6 eggs and cook in a flat pan. Then push the cooked whole eggs through a cooling rack (the one with squares). Perfect for egg salad or any addition to another salad. I'm going to try this with my dehydrated eggs!

    Try using a garlic press or similar tool to get the more minced egg that you would put in with mayonnaise and other ingredients to make egg salad

    You are so far ahead of me...I'm just messing with waterglassing eggs using pickling lime and water and seeing how well they hold up and what their textures end up in different applications.

    Nice Video & thank you, I've been experimenting with this myself for several years & testing it often to make sure I have it right, to help add to what your doing, I would definitely suggest that after you have completely turned your eggs into powder, to be 100% sure they are dry, Dehydrate them for another 3 hours, this will not change how the final products is, looks or tastes, but makes sure they are dry. When you store them in either a Glass Jar or Mylar Bag, be sure to add 1 Oxygen absorber to them, and to rehydrate the best mix I've found is 2 - 1 ratio of water to egg powder, example 1 tbsp for about 1 egg & 2 tbsp of water, that has been a solid mix for myself. Also when cooking them, be sure they reach an absolute minimum temp of 150* up to 160* so by rehydrating the Powder 3 more hours & by making sure the temp of the cooked eggs are 150 to 160* you are as positive as you can be of no Botulism or Salmonella. And as far as the grainy taste you mentioned goes, those people that I've seen post saying that actually cooked their eggs 1st & made scrambled eggs, then dehydrated those, then when they rehydrated them, that's where the comments on a grainy taste came from, so I tested this & they were right, so I would never cook my eggs before dehydrating them. Good Lucky & make sure to open all your stored Jars of Egg Powder & add 1 Oxygen Absorber to them.

    We pretty much do the same thing with our eggletts. They make great egg salad and go in great with our potato salad in spite of being premixed.

    I use dehydrated eggs that I buy in bulk. I will never have a freeze-dryer, nor do i expect to stock my cupboards with much freeze-dried food as it is too expensive. I am happy that you have one to use and enjoy.

    I own chickens and water glass my perfectly clean unwashed eggs. I place the eggs (left alone inside their shell) inside a large glass jar and pour lime water over them to cover. They store this way at room temperature from 8 months to 2 years. It doesn't work with store bought eggs that have been washed, which disturbs the natural bloom coating. When you want to use one, remove it and place it in a small bowl of water. This rinses off the lime and also will indicate if it is bad. If it floats, throw it away. It's pretty amazing and the best way to store eggs IMO.

    I have a freeze dryer as well. I boiled my eggs first and then separated the yolks from the whites and freeze dried them for the purpose of making chicken and tuna salads.

    Now I’m seeing a big hole in my prepping. I do have frozen yolks and my daughter is water glassing her eggs but I don’t know what I was thinking… maybe just adjusted to the idea it’s one thing I’ll do without! But this stops me dead in my tracks. (We all love egg salad sandwiches and eggs on our salad.) Possibilities are always there for creative minds. With an Alaskan he uses everything to fix or make do.
    So I’m thankful I’ve been alerted to dehydrate eggs for more usages! The days are never dull siding up to your projects. First things first in this whole process of living without power. I kinda like the challenge!!!

    I love all your videos. They are so on point, helpful and tells us and shows us exactly what to do. Well I dehydrated raw eggs to use in baked goods. Left on the counter but did label. I dehydrated orange peels. Left on the counter but labeled. Hadn't put them in the pantry just yet. I made some "water only " pancake mix, was waiting to add the dehydrated eggs. So I grabbed what I thought was the eggs, measured out the amount and added to pancake mix. The smell was so wonderful. Why? Then I looked, I added orange peel to my pancake mix. Well then I added my eggs and had to cook a pancake. My pancake was delicious. Just a hint of orange. They were wonderful. I left my orange peel out for about 2 days or so to help dry the white. Then using a small knife I scraped off the white stuff, then dehydrated. I could eat these rinds as chips. No bitterness.

    I haven't used them yet, but I separated some of my yolks from the whites and freeze dried them in separate trays. They could probably be cooked separately and then added to a salad. That way you can maintain the individual flavors.

    Retired at 40 hard boils his eggs, dices then freeze dries. Another product to manage worth a try. So far I only have powdered eggs.

    The difference between hard boiled eggs and your regenerated/reconstituted boiled eggs is the hard boiled eggs coo together in the shell but remain separate in the shell. If you freeze dry the whites and yolks separate and then freeze dry them, powder and store separately you should be able to reconstitute the separate ingredients to make your salad look like you used fresh products. With separated whites and yolks you can use the whites to make lemon meringue pie. When's dinner?

    There are silicone egg cups called 'Eggies' with a screw on top that you break your eggs into then boil to keep the shape of the eggs. They would work great.

    You could just as simply cooked them in a saute pan and then cooled and diced or crumbled them .

    Freeze dry the egg whites whole, and, the yolks scrambled. From 1 dozen eggs, separate 10 whites from the yolks. Keep 2 whole eggs, with the the whites, to scramble with the yolks. Freeze dried egg whites reconstitute as normal egg whites. You can fry them, poach them, bake with them, etc.. It's the solid yolks that do not reconstitute as normal. That's why we scramble them. Perhaps, with your little poachers, you could reconstitute an egg white, add a tsp, or more, of reconstituted yolk scramble. This should be reasonably close to a true boiled egg taste.

      @@RoseRedHomestead We do separated egg whites because they reconstitute perfectly. We use them for baking. I know, I can take raw eggs, separate them, pour the yolk in to 1.5" a silicone tube mold, and, steam it. I can remove the long cooked tolk, fill a 2.5" silicone mold with egg whites, push the cooked yolk rod into the center of the whites, steam it and create a long boiled egg rod. If you slice it all of the slices are exactly the same. (Its a food hack for pretty, uniform, food for caterers) This tastes and is textured exactly like a hard boiled egg. So, I'm sure, there must be a way to recreate that with freeze dried eggs, since, the whites reconstitute perfectly. I'll try a few different ideas when I have a chance. Im still thinking, a separate egg white, with a spoon of yolk scrammble carefully placed in the white, then, steam. You could microwave it, but, this would help if the power is out.

    I'm trying water glassing fresh, unwashed eggs using pickling lime in a food grade bucket. Hopefully they will be a great success and ill have some fresh eggs to go along with my powdered eggs.
