Harvest and Preserve Cabbage | Canned Coleslaw + Sauerkraut

  • Today is the day we harvest our large Alaskan cabbage grown under the midnight sun, weighing in at 37 pounds leaves and all! We work to preserve our abundant garden harvest through fermentation, pickling and water bath processing.
    ~ Canned Coleslaw Ingredients ~
    Sliced Red and Green Cabbage, Carrots, Beets and Kohlrabi
    ~ Canned Coleslaw Brine ~
    2 parts vinegar (of your choice) to 1 part water
    Sugar as desired
    Peppercorns, brown mustard seeds and celery seeds
    ~ Canned Coleslaw Instructions ~
    Sprinkle kosher salt over vegetable mixture, allow to sit for 1-2 hours then rinse well and drain.
    Heat brine ingredients and prepare canning jars. Each jar needs approximately 1/2 to 3/4 cup of brine.
    Pack coleslaw mixture into jars, pour hot brine over leaving 1/2 inch headspace.
    Lid and band jars, process for 20 minutes in a water bath canner.

    Ariel, just throws together some flour and butter, and water, chops some veggies and in thirty minutes out come a pastry that is cooked to perfection and would please a King, unbelieveable. they eat like kings in the middle of nowhere. What a duo.

Though they often used just fried cabbage and onions in a TON of butter with egg noodles (and a ton of pepper). It's good both ways, with bacon or butter or both of course. Best comfort food!

    Since I found your channel 3-4 years ago, y’all have motivated me to start my own garden 2 years ago and I can hopefully learn to can food next year. I’m no where near as successful at as y’all are in my garden,but I’m slowly learning and I really appreciate how you explain things and tell us the way you do things. I also love how you cover so many other things like bee keeping, fishing and hunting, preserving food and cooking. I just wish I could go fishing for salmon, but sadly they never come to NC except in the freezer section. Thanks for sharing your life with us.

      It's the most incredible greedy/proud feeling to see all those canned goods lined up. I canned like a maniac this summer. The last thing was the best: dill and garlic green tomato pickles, omg I wish I'd canned dozens of pints more...but I just wore out. I regretfully committed the last half bushel to the groundhogs.

    I made your canned coleslaw for the second year in a row. I used the green cabbage I got from my CSA. My son and I love it! We like it as is from the jar or with some mayo. So easy and yummy!💕

    I think you two are the real deal when it comes to homesteading if you go back and look four years ago and when y'all started to now y'all have done a an awesome job there's other CZcams channels out there that claim to be homesteading I think instead of them sitting around running their mouths they need to watch y'all two personally when I watch homesteading this is what I want to see again awesome job y'all love your episodes

    Initially, I thought the cabbage in the thumbnail was digitally enlarged-not in a malicious or deceitful way though. But, after watching the video and seeing that there was absolutely zero enlargement or exaggeration I was gob-smacked and literally blown away!! Amazing!     I always find the temperature and sunrise/set times interesting in your videos. It seems we have similar spring and autumn as you here in the north of England (cooler summer and much warmer winter though!) We're at 7.30am sunrise and 6.30pm sun set and the same high and low temperature as you today. Beautiful cabbage harvest! Everything looks delicious.

    It amazes me that you pick off the slugs on the cabbage like if it is nothing, lol. You have enough healthy food to last for many months. I learned a lot from this video. It is enjoyable too.

    First, I like seeing cold climate gardening. Second, the chemistry between you two is inspiring. Finally, I REALLY LIKE how you do a subject from start to finish. Cabbage to sauerkraut for example. Instead of slicing up a video into many smaller videos which may do better in the algorithm. Also, I'm not an historical fan of cabbage, but in recent years I found out that it's not bad if you salt it. And this video alone has inspired me to start growing cabbage in my Montana garden.

    You two are amazing!! I'm so impressed with your skills - regardless of what you are working on. Have you both been trained in culinary arts? Everything you cook looks delicious and you prepare such diverse meals. I just recently discovered your channel and I love it.
    I watch Hollar Homestead videos and the little girl (nicknamed Buggie) is most likely your biggest fan! She's so delightful, as is the entire family.
    I know this video is from the previous year but it will be relevant years from now. I can't wait to compare your 2023 harvest to the 2022 harvest.
