    If you want to try Filipino food that's different from what you're typically used to, there's Mindanaowan cuisine. The food from Mindanao has more Malayo-Indonesian influences, so it's different from the Chinese and Spanish influenced cuisine of major settlements in Luzon and Visayas. There's a Muslim district in Quiapo, or for a more comfortable restaurant experience you can try Palm Grill in Tomas Morato, QC.

    My mouth is watering watching this! We recently visited the Philippines in July but we didn't have enough time to do a proper food tour and completely missed out on Binondo. Mechado is my family's favorite and like Adobo the Mechado may be different from one household to the next. My favorite Karinderya meal is the Tokwa't Baboy with blackbeans and Kinchay similar to the Kuchay empanada filling you had. For now, I'll live through your gastronomic travels and Kasen's spot-on food reviews! He's a natural! Salamat!

    The traditional Maja Blanca is made from glutenous rice. The most common maja blanca are made from corn starch

    Great vid! But just want to point out that the origin of lechon is highly debated. It may not come from Spain necessarily because we were already spit-roasting food during the pre-colonial times. Other than that, again, great vid!

    Correction 17:22 the lumpia that you tried in Binondo is NOT Chinese lumpia. It’s actually “lumpiang Tagalog” perhaps can be said Filipino lumpia as opposed to the more common “fried egg rolls” or “lumpiang Shanghai” which I am certain was named after the egg rolls from China or the city in China, Shanghai.
    Another term used by locals when referring to the lumpiang Tagalog is simply fresh lumpia.
    Yes, the most famous seller is in Chinatown, popularized by CZcamsrs however know that there’s a lot of Chinese settlers in the Philippines from 4 or 5 generations ago, perhaps longer and over time they’ve adapted their motherland food to local ingredients. As I grew up in the PH in the 70’s and early 80’s fresh lumpia is often cooked at home, it was not unusual to serve as merienda since our main meals like breakfast lunch and dinner must include white rice almost all the time and the fresh lumpia is mostly a stand alone. Sometimes a side of crispy fried tofu with vinegar and soy sauce dipping. Yes, all a merienda.

      Interesting information! It didn’t use the same skin that I often see in fresh lumpia and it certainly had different ingredients. I’m sure everyone has the own variation, I love that about Filipino food but it’s also what makes it so surprising to me.
