One of my favorite things about this channel is how accessible it's stayed over the years, I feel like a lot of other popular home cooking youtubers have become unnecessarily chef-y and a bit pretentious but your videos are always so relatable and down to earth.
yeah she still seems like a food youtuber and not a food network show, but doesnt skimp on the camera and editing quality. And her backdrop has definitely gotten more aesthetically pleasing over the years!
Absolutely agree. Everyone tends to âgo Hollywoodâ after a while. Moving to LA, getting fancy studios, etc. Donât get me wrong, good for them, but as you said, Emmy has just stayed relatable after all these years.
ikr i love it
Sounds like the black bean brownie that I made.
I bet a lot of it has to do with the fact that she is a momma to two young kids. But I also think itâs just her personality. And I know I love that about her.
I appreciate how emmy puts her sponsors at the beginning or near the beginning of her video because its both follows the FCC guidelines, and also lets you watch the rest of the video uninterrupted
A good thing to do with a large zucchini is to slice it in half, scoop out the seeds, and stuff it with Italian sausage, bread crumbs, cheese, and some other seasonings, and then bake it at 350° until soft and browned on top. đ
Yummy.
You're making me hungry. I took a nap and haven't eaten dinner yet.
Thats a traditional italian recipe which i dont remember the name of
@@tentifr yep, I learned it from an Italian friend. I don't remember the name of it either, but I have it written down somewhere in my recipe file. đ
Cut the zucchini in rounds and use the zucchini in place of pasta and use it to make lasagna.
I recommend Field and Roast sausage
I was a Director of a day care center with 120 kids when I had a huge crop of zucchini from my home garden. Luckily I had a fantastic cook who made tons of zucchini bread with cinnamon spices and a chocolate zucchini cake that the kids loved! She used so much zucchini in them that they actually legally counted as a serving of vegetable! She also made a summer vegetable side, basically using whatever I brought in, with zucchini summer squash tomatoes carrots etc.
I like to think the zucchini's are actually normal sized and Emmy is just tiny sized.
Absolutely both!
I grow zucchini there are some monster sized ones
I"ve been freezing zucc for winter, made bread, made cookies, made zucchini lime sherbert, will eat zucchini with salmon in an hour, SO MUCH ZUCCINI
Donât forget to make zucc chili!!
Zucchini lime sherbert?! That's sounds like something I need to know how to make.
@@1VampieNight me to lol
I've never heard of zucchini/lime sherbet. Sounds refreshing and delicious. Especially in the hot summer months.
It's been close to 100° here sometimes.
@@H.P.Blavatsky
Zucchini chili is so good.
I'm not a vegan but I can make a mean vegan chili.
I've heard of using zucchini to replace the shortening in cakes before, especially chocolate cakes. Made a chocolate mint cake that way for my parent's anniversary a few years back. They loved it. No one noticed the zucchini.
I heard of beans and mayonnaise in brownies and mayonnaise in cakes
@@pattymorriello586 Yes, I've heard of mayo in cakes before.
I LOVE zucchini. It's my favorite veggie.
It's mild in flavor and would be delish to use in a cake instead of carrots.
Do you like red velvet cake? I love it.
But, it has a lot of red food coloring though.
I've been wanting to replace it with beet juice. People say you can't taste the beets at all.
Plus, they're good for cleansing our liver.
Since you experiment using veggies in desserts, have you tried using beet juice?
@@pattymorriello586
Mayo cakes are yummy. Especially in chocolate cakes.
I even make mayo muffins or biscuits. Self rising flour, mayo and a little milk or water to thin it out a little. It makes them light, fluffy and tender.
I don't know why some people turn their nose up at the thought of mayo in cakes.
Mayo is mainly eggs and oil, the exact ingredients we put in cakes anyway.
I've heard of using black beans in brownies.
And, if we can't taste them, I think it's a great way to get some nutrition in such a decadent dessert.
So instead of butter in any baked good, you can replace with zucchini purée?
I love watching your side camera come into focus. Every time I think to myself, "Will this be the time it doesn't focus?" but it always does.

Very true, love ur Wooper pic btw :)
I agree, I absolutely loved learning the varying cocoa powders!
I've heard of making a mock apple pie with zucchini as well. Maybe you could try that next!!!!!!
Great idea!
It's pretty good, but using chayote squash is heaps better. So yummy!
I love mock apple pie!!
Choko is a perfect vegetable for mock apple, the texture holds up a lot better than zucchini. Choko vines are incredibly prolific too.
@@annedymock2850 I didn't know chayote is also called choko!
âYou can make brownies!â - she says while holding up enough zucchini to make 10 batches of brownies đ€Ł
I mean, I may actually do that though
When you grown zucchini, you always get some big ones.
Iâve been making zucchini brownies for years. You can also make them into cupcakes. Zucchini bread is also yummy. I freeze the grated zucchini in two cup pouches.
What I love about zucchini is that it grows so quickly and become so big! One day of rain and you get GIANT zucchini, great for zucchini bread. Excited to try this brownie recipe!
My dog passed away last night, I really needed this right now
I hope you're doing okay đŸđ
I make this all the time, the zucc is actually friggin undetectable n makes everyone wonder how moist & decadent it so please try it guys :)
*yellow squash is a perfect sub n it will yield identical results!
Ohhh. I would imagine it would be even more so
Does it taste exactly like brownies or different?
@@youwerediagnosedwithcorona4430 you cant taste it. The brownie just tastes like a brownie.
@@youwerediagnosedwithcorona4430 Yes itâs like a classic homemade brownie, but whats great is itâs not like super dense & candy bar-like the store bought types. I find most too sickly sweet. Iâve gifted these to alot of ppl n they all beg for more! No one detects or sees the zucc.
Is it somehow healthier???
We made zucchini bread and muffins last weekend. Delicious
And now that my kids have moved out my husband and I can make brownies with nuts in it again LOL in my opinion it is so much better with a walnut letâs say or a Pecan if youâre going to add a caramel drizzle, oh my I want them now.
Absolutely, brownies need a nut!
With the brownies, you get 2 servings of vegetables. Zucchini, and cocoa powder is from the cocoa bean, and beans are a vegetable, so... đ And grain from the flour for carbs, and egg is the protein, so IMO, each serving (maybe a quarter of the pan? đ) would be a balanced meal, wouldn't it? đ
Too much sugar tho!
I agree! Brownies for breakfast!
@@H.P.Blavatsky So maybe make it with a sugar free sweetner? Not like you need carmelisation for brownies. đ
I like your thinking đ
Yes.

I was just looking up recipes to use up my zucchini/yellow squash and then here comes Emmy. Funny, helpful, adorable AND psychic?
It's zucchini season!
@@emmymade Yeah, but zero seconds? I call that psychic. LOL
That zucchini brings back fond memories of my grandpa and the first time I cooked. He taught me to season flour, how to make an egg bath, and we cut that zucchini into slices and battered it in egg and flower and fried it in oil and repeated until it was all cooked. Still make it on occasion as it is so tasty.
It's delicious.
I make them into zucchini fries, sometimes using Panko bread crumbs then baking them crispy.
Have you tried zucchini pickles?
My dad did this with yellow squash. Absolutely DELICIOUS!
Lol fine Emmy Iâll eat my vegetables! Jeez!!!
Thank you for that little aside about the different types of cocoa powder! I've seen both mentioned in recipes before, and I never had any idea about the difference.
One of my favourite ways to use up excess zucchini (especially ones that have gotten huge like these) is in...pretty much any dessert recipe that calls for chopped apples, I guess? I've made "apple" pie, crisp & cobbler with them! If you want it to REALLY be stealth, peel & seed the squash first! I usually toss the sliced/cubed squash with some cinnamon & sugar & a bit of lemon juice (like, with whatever is called for in the recipe you're using), and sometimes I add a splash of apple juice if I happen to have some, and let it marinate for a bit before assembling the dish. The BEST part though, is making it with kids, who are astonished that it tastes just like apple pie, and THEN helping them 'trick' their parents with some, hahaha. The look on a 5 year old's face when he or she finally can't hold the secret in anymore and blurts out "IT'S ZUCCHINI! THERE ISN'T EVEN ANY APPLES IN AT ALL!" is *priceless*! đ
I've made something like this but with avocado and it was amazing! Some of the best brownies I've ever made and you can only taste the avocado if you're looking for it.
Have you ever heard of or tried homemade avocado ice cream?
The avocados take the place of the eggs if the ice cream isn't Philadelphia style.
@@anakelly76512 I've never heard of that but it sounds awesome!!!
You describing the difference in cocoa powder using science reminds me of Alton Brown. He explained the differences as well.
You're the female Alton Brown.

Those zucchini are fabulous! When my husband and I started growing our eggplant-sized zucchini we found a recipe for zucchini fritters that we make essentially as a substitute to chicken or eggplant parm and pair it with pasta and garlic bread. It's delicious and uses a ton of shredded zucchini. The juice you squeeze out makes the compost happy too! You should try making zucchini fritters. I think you'd enjoy them.

Emmy, I made carrot cake muffins with shredded zucchini. The shreds disappeared in the baked muffins. I also squeezed the water out of the zucchini before I put it in the batter. They were moist and very good. You could not even tell the zucchini was in there, at all.

Emmy, you make me feel like everything is okay.
If you run out of ways to use zucchini, an old fashioned English recipe (probably 'hard times') is marrow and ginger jam where a marrow was/is a variety of summer squash. I have used overgrown zucchini to make it. The zucchini, which has hardly any taste, is flavoured by the ginger and it's delicious. I also made a small batch using rose scented geranium leaves, beautiful!
Iâve seen this thumbnail before, but in person and the woman was holding a mini zucchini. It didnât break my heart. She still had a smile.

I saw that recipe too! Itâs in my list to make with my niece. It will blow her mind!
This is nuts. YOU ARE AMAZING
Yeah when we would do a garden those suckers would grow and multiple like crazy! We made lots of zucchini bread, muffins and fried tons too. We'd also shred it and then freeze it so we could make bread with it in the winter. Even still we'd usually have to give a bunch away because there was just so much. But it's always nice to get to share with others. Never heard of using it in brownies though!
My zucchini brownie recipe is very different, and it is a family favorite, so I am sharing.
Zucchini Brownies
1/2 cup soft butter
1/2 cup cooking oil
1 3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup sour milk
2 1/2 cups flour
4 Tbsp cocoa powder
1 tsp baking soda
1/2 tsp ground cloves
1/2 tsp salt
2 cups finely chopped zucchini (not blended!)
1/4 cup mini chocolate chips (semi sweet is what I use.)
1/4 cup finely chopped nuts
Cream together butter and sugar, add eggs, vanilla, and sour milk.
Sift in flour, cocoa powder, baking soda, and spices. Stir. Fold in zucchini pieces. Pour into a greased and floured 9x13x2 pan. Sprinkle tops with nuts and chocolate chips. Bake in preheated 325° oven for 45 minutes.
These are more cakey, but very moist and almost a spice cake.

Awesome you go girl! thanks for sharing!
I really hate commenting with warnings, but if your zucchini are this big, especially with the US heat waves, taste a little bit before you do anything with it. If it the taste is bitter, they are poisonous because of their curcubitacine (?) levels. That poison can be lethal.
The poison has been mostly bred out of industrially grown zucchini, but it can sometimes occur in homegrown zucchini, e.g. because of cross-breeding or heatwave growth spurts.
The brownies look so amazing and I hugely enjoyed the video! I just want you to take care. â€â€â€
I don't think people need to worry. The worst that could happen with homegrown zucchini would be a bit of a stomachache. (And the brownies would be very bitter.) The few reported cases of poisoning in the US have been from eating wild gourds, or from hybrids of wild gourds and squash.
@@allisonferry-abee8693 In Germany there was a case of an older couple that received home-grown zucchini from a neighbour that were bitter. The couple was of the post-WWII generation that doesn't waste food. They made a casserole and the wife stopped eating but the husband ate up the entire portion. He died pretty horribly, his wife survived. It had been a hot summer in which zucchini had the exact growth spurts.
It is very rare, but it happens, especially with people who hate wasting food and thinking a little unusual taste won't kill them.
I am mentioning it because it is very easily avoidable.
Just what I needed at 1:02 AM

As you mentioned at 9:07 it does taste a bit cake like. I personally would consider this recipe to be more like a cake than a brownie. With that being said it is absolutely delicious! I would definitely make it again and it's a great way to use up extra zucchini. It's definately better tasting than a lot of recipes I've tried and definitely better than chocolate box mix.
This will be my go to recipe for the summer when I'm swimming in zucchini. Thanks Emmy!
Hi Emmy! When I looked at the printed recipe on your web site, the butter is missing from it - good thing I paid attention to your video! I made a few swaps with mine - didnâ t have espresso power, so I used a T. of Kahlua (yes!), and added a 1/2 c. or so of walnuts, plus another couple T. of flour. The flour made the batter a tiny bit thicker, and the brownies were still very moist. Thanks for sharing your recipe, and as always, I really enjoy your videos!
