My Italian brother-in-law makes this every Christmas for his 'real Italian Christmas'. And I find it funny, because he says Italian anything is better than everything. Whenever he talks about how great his pastitsio is, I smirk and let him think it's Italian because it would mortify him to know that his mother taught him to cook Greek food. He's not the brightest bulb on the Christmas tree.
How did you know that I wanted a vegetarian version of Pastitsio? Seriously, I know that this will be delicious. But what about herbs? Sure, dill is de rigueur, and parsley goes very well with dill, but so do mint and oregano. And how about lemon, both zest and juice? If faced with all these choices, do you have any advice on (1) whether any of these suggestions would be an enjoyable addition, or would they just overwhelm the simplicity of the dish, and (2) if so, where would you recommend adding them, if you have an opinion: mixed into the spanakopita filling and/or the béchamel, or sprinkled after each layer and/or atop the béchamel? For the past few days, I’ve been watching various online versions of Moussaka. I’m not a stickler for traditional ingredients or techniques just for tradition’s sake, but I wouldn’t want a moussaka without cheese, for instance. Or with baked potatoes and eggplant rather than fried. Sure, it’ll be fewer calories, but for the rare occasions on which I can see myself making a moussaka - maybe a holiday or entertaining - I wouldn’t want a pared-down diet version, no siree! So many people have been brainwashed to automatically think to reduce or completely eliminate calories, carbs, or fats - IMO those are the folks who eat to live. I am the opposite: I live to eat! I love food; it’s one of life’s great pleasures. I have known people who don’t really care about eating, other than to assuage their hunger. I thank all the gods that have ever been invented, including the Greek and Roman ones that were transformed from worship to mythology, that I was born with Zorba’s enjoyment of life. OPA! I talked about this with my therapist this morning, and now I’ve inspired her to make a moussaka of her own. LOL 😂 😊
I feel like lemon juice would ruin the béchamel. Zest, maybe, but not juice. I'm not a fan of dill. Nutmeg goes with spinach, but I'd also do Marjorie, Thyme, basil, oregano, whatever you like
