OH YUM!!!!!! Even without carrots, it makes a GREAT spice cake! Don't like grated carrots??? Use pureed carrots, like baby food carrots! I will make some in snack bags (without wet ingredients) to portion it out, and use them like a boxed cake mix. Just grab one and make it with the wet ingredients. Thank you for this fabulous cake recipe! Good as always!

I am in the same boat, now only Cooking for one, and yes sometimes I don't cook at all..... it's difficult cooking for one...
add pineapple walnuts, coconut and golden raisins with cream cheese frosting... yum

You can also add a piece of bread to your brown sugar occasionally to keep your brown sugar soft.
That is another option, the bear is just much cuter than a slice of bread!
Marshmallows keeps your brown sugar soft too.
