    We are making the most popular potato stir fry recipe in China - 酸辣土豆丝. Which means hot and sour shredded potato stir fry. If you ask any Chinese people, they will know about it.

    INGREDIENTS
    - 400 grams of potato shreds
    - 2 tbsp of white Vinegar
    - A small piece of bell pepper, cut into shreds
    - 2 pieces of scallion, separate the white and green part
    - Some ginger shreds
    - 2 cloves of garlic, thinly sliced
    - 4 pieces of hot dried chilies [Amazon Link: geni.us/hmTd]
    - 1/2 tbsp of Sichuan peppercorn [Amazon Link: geni.us/Gw7LP]
    - Salt to taste
    - 4g / 1 tsp sugar
    - 1.5 tbsp of Chinese black vinegar [Amazon Link: geni.us/Bqw98A]
    - 2.5 tbsp of oil to stir fry
    INSTRUCTIONS
    - You want to use red skin potatoes because they are low in starch which will give you a nice texture for this recipe. Peel the skin and cut the potato into shreds.
    - Soak them in room temperature water for 20 minutes. Add in 2 tbsp of white vinegar into the water. Vinegar will cause some chemical reaction with pectin that is exiting in between the plant cells, I don’t know how to explain that, but that will change the texture of the potatoes. It is very interesting.
    - Drain the potato and leave it in the sieve so it will have a little more time to get rid of any excess water. If it is not well drained, the dish will be too saucy.
    - Add some oil to your wok, about 2.5 tbsp. You can use less oil if that is what you prefer. Add the Sichuan peppercorn in while the oil is still cold. That will season the oil when the wok is getting hot. We just gonna fry the peppercorn for a minute. Don’t burn it. If the peppercorn turns black, it will bring a bitter taste. Once you think you got enough flavor, you can tilt the wok and fish out all of them. This is optional. I just think it is quite annoying if you leave the peppercorn in the dish. It does not feel good if you bite one by accident.
    - Throw in all the aromatics besides the green part of the spring onion. Give them a few quick stirs. Dump in all the potato shreds. Toss it quickly. You want the oil to coat the surface of the potato. That will prevent it from producing starch. If you don’t do that, it will likely stick to your wok which is quite painful. Keep stirring them another minute and a half.
    - Season it with some salt. I used a little bit less than 1 tsp. Some sugar, about 1 tsp as well. Few more stirs then add 1.5 tbsp of Chinese black vinegar along with the green part of spring onion. This is the vinegar that I am using and yes, you can use white vinegar for this recipe. I just think this provides more flavor.
    - Keep stirring and mixing all the ingredients. Now you will see that the potato shred becomes a bit softer. They are not stiff anymore. That means you are done. Take it out and serve. It is a side dish in China. You normally will have a meat dish and a soup to go with it.

    In India in Konkan region these peppecorns are dried and added to uncooked rice that is stored for year long consumption. They keep the rice bugfree.

    Wow! This dish does seem very easy to prepare (so long as one has a very sharp kitchen knife for the potato shreds). I've not heard of this recipe before, but I love hot and sour soup and I also enjoy potatoes, so I think I will need to make some very soon.     Thank you for a super version. With the added szechuan pepper, this knocked the dish outta the park, I made it two days ago and am still amazed at the sum of the dish from such humble ingredients!!
    BTW, I've had great success shedding the potatoes with a Borner V-slicer using the 3,5mm shedding plate. The cuts are very clean & precise, and makes for very even cooking of these shreds as each of them is the same size.

      I know you wrote your comment 3 years ago but I’ve just seen it and wanted to say thanks for the tip re the mandolin slicer - I also have that slicer and the 3.5mm attachment so I gave it a try and it worked great in slicing those potatoes perfectly, with sharp edges! Many thanks!

    I just cut them in bigger parts but still smaller than fries, compare them to matchsticks, and I leave the skin on.
    Then I soak and after 10 min of soaking let them dry, put some (sezchuan) dried peppers in the oil followed by sezchuan peppercorn, roughly bite size chopped or grated ginger, chopped garlic, potatoes, soy sauce and finally a splash of chinese black vinegar at the and and serve it with some rice and coriander. :)

    Just made this. It tasted great! I didn’t have a good tool to sift out the Sichuan peppercorns and I didn’t want to burn them, so I just mixed them in with all my other aromatics. Otherwise followed the recipe as is.

    I love this recipe. German style potato salad is sweet and sour and popular. This recipe is exceptional and more tastey, PLUS healthier and easier. Maybe add bacon, lol.

    Love it!!! I sometimes like to use MSG in some of my recipes; do you think that it will be a good idea to put a small spoon in while stir-frying? You have a wonderful channel, I subbed!

      It is a cast iron wok. I got it from China. I can't find this type of wok with the hammer mark anywhere outside of China. But, I get so many requests and I'm going to make this my first official product soon

    Hi! Thank you for another great recipe! I tried your bell pepper steak the other day and really enjoyed it! I have a question, do you have any tips on how to cook rice chinese style? No matter what type of rice I buy I'm always a bit disappointed in the final taste. I know about the rincing technique, but any other tips are more than welcome. Happy new year !

      A decent electric rice cooker makes all the difference. At university I lived with 15 Chinese people (!) and they all had their own fancy rice cookers that produced perfect fluffy and just slightly sticky rice.
