How to make Easy Easter Funfetti Whoopie Pies! Social Distancing Baking!

  • Today I made easy funfetti Whoopie Pies that you can make at home with ingredients you probably already have at home. You can make these while you are all social distancing with your loved ones. I know it's a tough time right now, but hope you are all staying positive and gaining some new hobbies. Love and prayers to you all! Stay Strong!

    RECIPES
    Ingredients
    1 box Funfetti Cake Mix OR White Cake Mix + Funfetti Sprinkles
    1 container Whipped White Frosting, OR homemade American Buttercream
    1 lg Egg
    1/2 cup unsalted butter, softened
    Food coloring of choice for Icing
    Rainbow Nonpareils or Sprinkles, if desired
    Instructions
    1. Preheat oven to 350 degrees.
    2. Combine the cake mix, egg, and butter in a medium bowl. Beat together until well mixed. This will take a few minutes.
    3. Gently stir in the sprinkles, adding as many as you would like.
    4. Roll dough into 1-inch balls and place on a cookie sheet. Leave space between each ball. Lightly press the cookies down about halfway, and bake for 8-10 minutes.
    5. Remove from oven and cool completely.
    6. Divide the frosting and mix in colours of choice. Place each colour of frosting into an icing bag with any tip you like. I used a star tip and a round tip. You can use a ziplock bag as well, and snip the corner off to use for piping.
    7. Pipe a round mound of frosting on the bottom of one cookie and gently press another cookie on top of it. Repeat this until all the cookies are frosted and topped with another cookie. This recipe will make approximately 10 whoopie pies.
    Ganache
    3:1 Ratio of Candy Melts to Whipping Cream/Heavy Cream
    1. Microwave the Heavy Cream for 1-2 minutes.
    2. Put in the ganache and cover container for 5 minutes.
    3. Stir mixture until well incorporated. If it's not yet fully melted, put in microwave for a few more seconds at a time until completely melted.
    4. Let cool and thicken prior to using.
    Note: Adding ganache to these cookies will make these cookies sweeter. If you do not want these too sweet, opt out of the white chocolate ganache topping!

    Nay looks good but looks like it has a cookie texture. Woopie pies are fluffy cake like. Still looks great must try.

    The long term sick too also having to isolate even from family. It sucks but what can we do.
