    Thank you for this video. I live in Canada and grew aji amarillo peppers in my garden last summer - they were small yellow peppers. I also found frozen large orange aji amarillo peppers at a Latin American market here. It is nice to see a recipe that involves the fresh chiles, not just the jarred paste. I hope to learn how to use them in a non-paste form also.

    Hello Pablo. Hope you’re well. Is there any sauce in the Peruvian cuisine that is called Aji Verde? I tried Peruvian food once and there was an amazing green sauce but I cannot figure out what it was.

    Hi, aside from ceviche, I have not tried eating Peruvian dishes. Is there a particular kind of chilis that I should use to make this sauce? Would there be substituted?

      Hey! you can actually use any type of chillies that you have locally available in your city and experiment with that! In case you're only able to find them dried, you can just soak them for a while and then process them into a sauce! If you feel like try and cook some peruvian food, i have a masterclass which is about peruvian food and its available in english! you can find the link on my instagram handle!

      Its always better to add some salt into it, it helps with preserving the sauce better!
