Ingredients:
• 2 racks Prairie Fresh ribs
• Heath Riles BBQ Garlic Jalapeńo Rub
• Heath Riles BBQ Peach Rub
• Peach pie filling
• Cinnamon sugar
• Heath Riles BBQ Brown Sugar Honey Habanero Glaze
Glaze:
• ¼ cup peach preserves
• ⅔ cup Heath Riles BBQ Competition BBQ Sauce
• ¼ cup Heath Riles BBQ Brown Sugar Honey Habanero Glaze
Directions:
1. Stoke the Traeger Ironwood XL or your grill of choice with Royal Oak Charcoal Hardwood Pellets and fire it up to 250℉.
2. Remove the ribs from their packaging and pat them down. Trim the ribs to your liking, removing fat pockets, membranes, stray pieces of bone, and gristle.
3. Spritz the ribs with water and lay down a good base coat of Heath Riles BBQ Garlic Jalapeńo Rub, followed by a dusting of Heath Riles BBQ Peach Rub. Flip the ribs and repeat the process on the other side. Let the ribs sweat in for 15 minutes before smoking.
4. Lay the Peach Cobbler Style Ribs on the Traeger Ironwood XL and let them smoke for 2 ½ hours, spritzing at the halfway mark.
5. Double-line a baking tray with aluminum foil and spread peach pie filling over it. Top the filling with Heath Riles BBQ Peach Rub, cinnamon sugar, and Heath Riles BBQ Brown Sugar Honey Habanero Glaze. Then, set the ribs over the top and repeat the process on the back of the ribs.
6. Place the wrapped ribs back on the Traeger Ironwood XL and let them smoke for 2 hours and 15 minutes. Take the Peach Cobbler Style Ribs off the pit and let them rest for 30 minutes while you prep the glaze.
7. To make the glaze, combine the peach preserves, Heath Riles BBQ Competition BBQ Sauce, and Heath Riles BBQ Brown Sugar Honey Habanero Glaze in a small cast iron skillet. Let the glaze warm on the Traeger Ironwood XL while the ribs rest.
8. Brush the glaze on both sides of the ribs, dust them with Heath Riles BBQ Peach Rub, and set them back on the grill to tack up for 15 minutes. Take the ribs off the Traeger Ironwood XL and let them cool before digging in. Enjoy!

As always, those looked awesome! Smoked 3 racks yesterday going with the same temp and times, they were some of the best ribs I've ever done. I made up a Rum and Peach glaze from scratch, they didn't quite smell like peach cobbler, but were so good! After watching your video, I'm feeling the urge to go heat some up 😆

You know a great side for those ribs? Grilled peaches! Now, some folks baste them with Jack Daniels but that’s not required. What is required is some butter and cinnamon sugar. When they’re done a scoop of vanilla ice cream in the center sets it off.

That peach rub is insane great. I thought I hated peach rubs after using one of Myron Mixons rubs that was heavy with peach flavor. Didn't care for it. I avoided them for a good while. But the Heath Riles Peach Rub is awesome and it opened my mind back up to it. I been using it quite a bit for ribs. Works like champ. I typically use a local bbq rub as a light base and either use the peach rub or the sweet bbq rub as the top coat for ribs. Always good.

Awesome video! I just did a peach rib cook myself! I made a basic bbq sauce but added Simply Peach Juice and a bunch of peach jam to it! Man I love all things peach and it works so well with ribs!

Question for you Heath or anyone who sees this. I have a lot of your rubs and similar size bottles. What do yall recommend for easy storage or carrying for someone who doesn’t have an outdoor kitchen and has to keep things stored elsewhere? I probably have about 12 different rubs and will have more before long.
A lot of people usually just store them in pantries. I use a Yeti Go Box for carrying all of my supplies.

Either way. I typically run 275-300 but cooking at 250 is fine.

I have a quick question regarding my recent cooking experience with baby back ribs on my Kamodo Joe Series 2. I followed the recommended temperature of 225 degrees Fahrenheit until the ribs achieved the desired color. Subsequently, I added your butter bath and let them cook for another hour until they were tender and exhibited the desired pullback. However, I noticed that some of the rib packages had little to no liquid, despite maintaining the same temperature throughout the cooking process. Could you please provide some insight into what might have caused this issue?

I wouldn't say so. It's more of a backend heat for a little flavor pop. It's not meant to burn you up. I'm not a huge fan of a lot of heat myself, and I don't want to make anything overly spicy.
So are the “charcoal pellets” better than say Apple or hickory?
I like to use Royal Oak pellets but use whatever you prefer
