    This Filipino Style Chicken Barbeque Skewer are sweet and savory combo juts bursting with flavor. This recipe is inspired by those flavors. For this recipe the traditional way is adding banana ketchup in the sauce and pour in coca cola for the chicken to tenderized and is good way to add the tangy flavor into the sauce.

    18 Ingredients:
    Meat
    * 1 lbs Chicken thighs, sliced in bite size (1inch)
    Produce
    For Barbeque Sauce:
    * 2 tablespoon Garlic, minced
    * 1/2 teaspoon Ginger, grated
    * 1 medium Shallots, chopped
    * 1/4 cup of juice from Lemon
    * 4 dried bay leaves
    For the Vinegar Sauce:
    * 1 teaspoon Garlic, minced
    * 1 small Shallots, chopped
    * 1/2 cup Small Cucumbers. sliced
    * 1/4 cup of Scallions leaves, chopped
    * 2- or 4-Pieces red chili peppers (optional)
    Canned Goods:
    * 1 cup of Coca cola
    Condiments:
    For Barbeque Sauce:
    * 1 cup Soy sauce
    * 1/2 cup Ketchup
    * 2 tablespoon Vinegar
    For Vinegar:
    * 1/2 cup Vinegar
    Baking & Spices
    For Barbeque Soy Sauce:
    * 1 tablespoon brown sugar
    * 1/2 teaspoon salt
    * 1/2 teaspoon ground black peppers
    For Vinegar
    * 1/2 teaspoon salt
    * 1/2 teaspoon ground black peppers
    Steps:
    1. Start by making the Barbeque soy sauce, in a small bowl add together all the main ingredients add the soy sauce, ketchup, brown sugar, garlic, ginger, shallots, juice from lemon, vinegar, coca
    cola, seasoned with salt and ground peppers and dried bay leaves. Mix all the ingredients until fully
    combined until the sugar are dissolved.
    2. Separate 1 or 2 cup of the soy sauce mixture and set aside to use for basting later.
    3. Prepare the chickens. Clean and slice the chickens into 1-inch pieces or bite size. Then transfer
    the chicken pieces into a shallow bowl container. Add the rest of the soy sauce mixture to the
    chicken bowl container and mix until all the chicken are fully covered into the sauce.
    4. Covered and marinate for 3 - 5 hours.
    5. Prepare the bamboo skewers. Soak the bamboo skewers in the water while waiting for the
    chicken to marinate. This will prevent from burning the skewers quickly.
    6. Cooking the Barbeque Sauce. We will cook our separated soy sauce mixture for basting of
    the chicken skewers. Bring this mixture to a complete boil, once the sauce begins to thickens
    turn off the heat and let this cool down and set aside.
    7. Now let's make the vinegar sauce for the skewer's chickens to dip in. Add vinegar, garlic, shallots,
    cucumbers, green scallions, salts, ground black peppers, and optionally add some chili peppers to
    some kick of heat. Mix thoroughly and set aside.
    8. After 5 hours of marinating the chicken pieces, it's time to skewer the chicken into the bamboo
    sticks. Carefully tread the chicken pieces on the skewers, making sure to leave spacing on each
    pieces you can put about 4 or 5 pieces on each sticks.
    9. After the chicken all in the skewers, throw away the left over marinate sauce. We don't need to
    use left over from the marinated chicken, because we separated 1 or 2 cups of soy sauce mixture .
    10. Time to grill the chicken skewers! At 400 F (204 C). Carefully bring the chickens into the grill
    7 - 8 minutes on each side. Baste the chicken with the cooked barbeque sauce every time you
    check the chicken this will help to add more flavor to the chickens. Use brush and tongs!
    11. Serve and enjoy with steam white rice and dip into the vinegar sauce mixture!
