You can make fermented juices out of any fruit that has a white ‘dust’ coating on its peel that can be scrubbed off. Best examples are grapes, plums, quince etc. apples, pineapples and watermelon work fine too.
Just do the same process as when making wine - rinse off dirt without rubbing too much, crush things up (bean sized is good because smaller will be harder to strain) , add water and some sugar if needed (should be watery and a bit too sweet). Don’t use too hot water. Keep the mixture warm (summer’s room temp is perfect, but it works as long as it’s over 15Celcius. Less than that and it will sour or mold before fermenting). Strain all solids when you see strong signs of fermentation like bubbling. Let it ferment for a while ( how long depends on temperature, sugar concentration and fermenting vessel used), and bottle it after it has almost stopped fermenting and there’s only some sweetness to it. Drink as is, or let ferment for a day or two outside of the fridge, then move to fridge for a week. The second method will leave you with sparkling fermented juice.

@@poppilovice6827 you’d be washing off the natural yeast. Just rinse it if you must. But if it’s dirty I’d just peel and eat it instead of using it for this

@@irish1759ablehow did you know it failed? It didn't fizz? Or was it moldy or something? I want to start fermenting, but I'm SO nervous about bad bacteria or mold. I'm new to the process, so not really sure how to spot it. I'm trying to learn all I can, so I know what to look for when starting.
My ginger bug started bubbling on the second day i decided to start the bottle process but maybe im afraid it may fail idk

Just a note to anyone wanting to make this: the carbonation will continually build pressure in the bottle and *could cause it to explode.*
Use a high quality bottle/container and burp it often (open slightly to release pressure)

Filter your water or use DI water the chlorine content might be killing the yeast.

i only have to leave it for a few days and well the alcohol volume is kinda too high already, pretty much around 20-30%, can feel the heat with one sip
no this is low alcohol, im curious though, how do you get it to 20% most yeast die off well before that!
@@TheBruSho idk but i think the yeast finally all die out atm, the drink turned bitter, maybe only around 10% tbh i don’t have a measure because i just started and the drink seem to not as strong as when i leave it outside of the fridge

20 - 30% ABV unlikely. Is that what the hydrometer read?
You definitely don't have anything close to 20-30 ABV
It would take a specialised wine yeast, ALOT of sugar, yeast nutrients and temperature control to even get close to 20% in a couple of weeks.
The heat you're tasting is probably just from the ginger itself, which is quite spicy.

You can't. Get a sodastream machine to carbonate your drinks instead.

Anyway to make a fermented soda or something similar that is 0% not .5% or anything like that, sorry if this is a silly question
just using less sugar so there is less to ferment. Although .5% is so low its considered non-alcoholic (at least in the states). Some breads have more alcohol than that.

I did not know bread could/was alcoholic at all thats cool, I have a family member whos interested in my fermentation projects and wants me to make something for them yet they are a sober alcoholic so they dont wish for anything alcoholic in the slightest, thank you for taking the time to reply :)
@@moviekittyclips Looking into using water keifer grains. I dont think it produces any alcohol, I'm not 100% sure. But it's also an alternative to make another type of fermented carbonated drink.

I just use 1/4tsp Yeast 2 oz Ginger and like a cup or two of sugar ,,, wonder if this is bad for my gut??
I dont think its bad, you're just using yeast vs this method uses natural fermentation from lactobacillus.

@@dumaass soda :p I haven't made anything amazing yet, but they're definitely in the soda family! So I'm pretty happy about that.
I tried making both a cola and a MTN dew clone. The cola ended up a bit overly citrusy, and the MTN dew clone ended up super citrusy, so I added pineapple, and now it just tastes like a tart pineapple soda :p
All in all, good. But I want to make sodas closer to actual sodas I've had. I've also made cherry syrup and banana syrup as flavor enhancers for my cola.
My next experiment will be with EOs, so I can get rid of some of the excess and make purer syrups.

I've made syrup out of a lot of stuff. My cola recipe is a bit much, but you can basically Google cola recipe and find a facsimile. But I've also done cherries, bananas, grapes, and left over candy- because I was bored.

Lacto fermentation.
That’s what the ginger bug is for. You’re feeding the naturally occurring yeast on the ginger with sugar each day until it begins to ferment. Then that is mixed water and whatever flavors you add to make the soda.
