Butter Cookies à la Walkers with Fresh 100% Arabica Coffee - An Original and Delicious Recipe!

  • Needless to say, I LOVE Walkers... You don’t know them? I DON’T BELIEVE IT!
    They’re the famous Scottish butter cookies! And it’s from this recipe that I got my inspiration... with a little twist, of course.
    First, get yourself some great fresh coffee, some rum (optional), and some high-quality butter... and then get ready to enjoy a deliciously buttery cookie that you won’t be able to resist!
    Enjoy the recipe from Acquolina in Bocca.
    Ingredients:
    200 g Butter
    280 g All-purpose flour
    100 g Brown sugar
    1 tablespoon Honey
    1 small cup of Coffee
    1 or 2 tablespoons of Rum
    A pinch of Salt (optional)
    Instructions:
    Take a bowl with high sides and add the butter (softened about half an hour before), sugar, flour, honey, and rum.
    Start kneading with your hands, and while doing so, add the coffee.
    When the ingredients are well combined, transfer the sticky dough to a work surface and continue kneading until it becomes smooth and homogeneous. Be sure to add a little flour before working it, and if necessary, keep adding a bit at a time, just like you would with pizza dough!
    Once the dough is ready, shape your cookies as you like; I made them rectangular using a knife, but feel free to use any tools you prefer.
    If you want, with part of the dough, you can try adding a pinch of salt, just like in the original Scottish cookie recipe, or increase the amount of flour to make them more crumbly!
    Bake in the oven at 160°C (320°F) for about 25/30 minutes, and make sure to pay attention because every oven is different-the goal is to keep the cookie soft and buttery on the inside.
