    Soy Sauce Base Sauce: (간장 양념)
    3 tbl. soy sauce (간장)
    1 tbl. sesame oil (참기름)
    1 tbl. starch syrup (물엿)
    1 tbl. sugar (설탕)
    1 tbl. plum extract (optional) (매실액)
    1/3 tbl. minced garlic (다진마늘)
    1 tbl. ground sesame seeds (깨소금)
    Soy Sauce Noodles:
    Soy sauce base sauce (간장 양념)
    200g somyeon noodles (소면)
    Dried seaweed (김가루)
    1 egg yolk (노른자)
    Ground sesame seeds (깨소금)
    1. Boil the noodles. About 3 minutes.
    2. Drain noodles and rinse with cold water.
    3. Mix together the soy sauce base sauce.
    4. Place noodles on a plate.
    5. Top noodles with soy sauce base sauce.
    6. Toppings: seaweed, 1 egg yolk, ground sesame seeds
    7. Enjoy!
    Zucchini Soy Sauce Noodles
    Soy sauce base sauce
    1 Korean zucchini (애호박)
    2 green chilies (청양고추)
    1/2 green onion (대파)
    200g somyeon noodles (소면)
    1 tbl. perilla oil (들기름)
    1 tbl. cooking oil (식용유)
    Salt (소금)
    Ground sesame seeds (깨소금)
    1. Cut the zucchini, chilies, and green onion.
    2. Massage the zucchini with salt and let sit for 10 minutes.
    3. On a pan, heat perilla oil and cooking oil.
    4. Fry green onions and chilies.
    5. Squeeze zucchini to remove excess water before adding to the pan to fry.
    6. Fry for several minutes.
    7. Remove from heat.
    8. Boil the noodles. About 3 minutes.
    9. Drain noodles and rinse with cold water.
    10. Mix noodles with soy sauce base sauce.
    11. Place noodles on a plate.
    12. Top noodles with zucchini, green onion, and chili mixture.
    13. Add additional chilies if you enjoy spicy food.
    14. Finally top with ground sesame seeds.
    15. Enjoy!
    Kimchi Soy Sauce Noodles
    2 green chilies (청양고추)
    400g fermented kimchi (묵음지)
    5 tbl. soy sauce (간장)
    2 tbl. sugar (설탕)
    2 tbl. perilla oil (들기름)
    Ground sesame seeds (깨소금)
    1. Thinly slice green chilies
    2. Rinse kimchi to remove excess sauce.
    3. Dice kimchi into bite-sized pieces.
    4. In a bowl, mix together sugar and soy sauce.
    5. Add diced kimchi to the soy sauce mixture. Mix well.
    6. Boil the noodles. About 3 minutes.
    7. Drain noodles and rinse with cold water.
    8. Place noodles on a plate.
    9. Top with soy sauce kimchi mixture.
    10. Top with green chilies to desired spiciness.
    11. Enjoy!
