Ingredients:
400g minced pork
100g dangmyeon (sweet potato starch noodles) (당면)
1/2 onion (양파)
100g chives (부추)
15g minced garlic (다진마늘)
4g minced ginger (다진생강)
300g firm tofu (두부)
250g mung bean sprouts (숙주)
100g Korean cabbage (배추)
0.5 sesame oil (참기름)
2 eggs (계란)
Enough dumpling wrappers (Estimate: ~90-100) (만두피)
Dumpling Filling Sauce: (만두속)
0.5 tbl. sugar (설탕)
3 tbl. soy sauce (설탕)
3 tbl. oyster sauce (굴소스)
1 tsp. salt (소금)
2 tbl. sesame oil (참기름)
Dumpling Dipping Sauce
2 tbl. soy sauce (간장)
1 tbl. vinegar (식초)
1 tbl. honey or sugar (꿍 대신 설탕)
1 tsp. red pepper flakes (고추가루)
Steps:
1. Soak dangmyeon noodles in water for 1-2 hours.
2. Prepare the veggies (onion, chives, garlic, ginger, cabbage). Cut them into bite-sized pieces or small dices.
3. Drain the water from the tofu. Place the tofu into a cheesecloth and squeeze out the excess water. Set aside.
4. Boil dangmyeon noodles in a pot for a few minutes until soft and tender. Drain.
5. Place drained noodles into a small bowl. Add 0.5tbl. sesame oil to prevent sticking.
6. Cut noodles into bite-sized pieces.
7. Boil mung bean sprouts for 4 minutes. Drain. Cut into bite-sized pieces.
8. Place minced pork into a bowl with the dumpling filling sauce ingredients. Mix well.
9. Add prepared veggies and other ingredients. (onion, chives, garlic, ginger, cabbage, tofu, mung bean sprouts)
10. Crack and add two eggs to the filling. Mix together well.
11. Fill each dumpling wrapper with a small spoonful of dumpling filling.
12. Wrap the dumpling and set aside.
13. (Optional:) Make dumpling dipping sauce.
14. Enjoy as desired. (Deep fry, pan fry, air fry, steam, etc.) Or store and freeze to enjoy later!

    Kimchi Soy Sauce Noodles 2 green chilies (청양고추) 400g fermented kimchi (묵음지) 5 tbl. soy sauce (간장) 2 tbl. sugar (설탕) 2 tbl. perilla oil (들기름) Ground sesame seeds (깨소금) 1. Thinly slice green chilies 2. Rinse kimchi to remove excess sauce. 3. Dice kimchi into bite-sized pieces. 4. In a bowl, mix together sugar and soy sauce. 5. Add diced kimchi to the soy sauce mixture. Mix well. 6. Boil the noodles. About 3 minutes. 7. Drain noodles and rinse with cold water. 8. Place noodles on a plate. 9. Top with soy sauce kimchi mixture. 10. Top with green chilies to desired spiciness. 11. Enjoy!
