    I use boiling hot water to mix it up as this precooks the corn meal and keeps it from being gritty. You're boiling water for coffee anyway.

    One of our go to fishing camp breakfast is to add a little diced onion, pepper, and flaked leftover fish to the johnny cake batter and make cowboy fish cakes. A great way to use up leftovers

    Looks good, and we ate these when I was a kid some 40ish years ago...lol. Consistency reminded me of when my dad would make potato pancakes with our left over mashed potatoes the next day. That was just mashed potatoes and an egg or two beaten, with some fresh onion added and fried in lard in the iron skillet. I still make that for breakfast with some fried eggs.

    You can also make a polenta with water and a few tablespoons of Corn flour. Bring that mix to a boil with butter and salt. It's really good.

    I think it looks very tasty. I have never seen a corn muffin cooked this way before. I'm from Belarus and some of your ingredients are not available here, so now I'm trying to figure out how to adapt your recipes to what I can find in stores. Thank you for the video :)

    I think the original name was journey cake as they made them for taking on a journey back in the day. Nothing like them especially with maple syrup. Good meal with that good bacon!

    Another great video, thanks for your time. Dave do you do fried corn? If so I'd like to see your take on it. I grew up having it around camp, if there was any left dad would mix it into corn cakes for snacks later.

    My 9 year old son recently attended a “Hands on History” “18th Century Living” week long camp.
    They made these and we’re taught that it’s believed they were originally called “Shawnee Cakes” and the name may have changed to Johnny Cakes as a misunderstanding in translation or perception in hearing.
    I found this interesting & thought you may too!

    I still remember when I asked my mom to make cornbread to go with chili and my Grandma just rolled her eyes and asked why I would ever want to eat that. She said when she was little they called it Johnny cake, and a lot of times that was all they had to eat. Makes you appreciate what you have and how hard our ancestors really had it.

    I want to try that, and corn bread too but trying to find corn meal in a shop in the UK is like trying to find chickens teeth! Sure you can buy it online but man it's so expensive. I don't understand why it isn't readily available here, it ain't right!

    You should look at montesanto and the things they do to corn. Also you should check out how difficult it is to find heirloom corn seed it's pretty much not existent
