DIRECTIONS:
1. Add 1 cup rolled oats, 4 cups water, 1 enzyme capsule, and 1 tsp vanilla extract to blender and blend for 20-30 seconds.
2. Heat in pot to 145 F (63 C) and let sit for 15 minute while stirring regularly (Optional flash boil at end to deactivate enzymes).
3. Strain contents in nut milk bag or 4-6 layers of cheesecloth AND DRINK!
4. BARISTA ONLY: Place contents back in blender. Slowly add lecithin, oil, xanthan gum, and baking powder while blending on low (Dividing batch into 2 may be necessary for mixing depending on blender size).
INGREDIENTS:
- 1 CUP ROLLED OATS
- 4 CUPS WATER
- 1 DIGESTIVE ENZYME PILL (~8,000 DU OF AMYLASE)
- 1 TSP VANILLA EXTRACT
BARISTA EXPANSION PACK:
- 3 g or 1.5 TSP SOY LECITHIN
- 1 g or 0.5 TSP XANTHAN GUM
- 23 g or 1.75 TBSP OIL
- 1/8 TSP BAKING POWDER

"Pitch" the amylase into your oat milk after reaching 145F. If you overshoot just wait for it to cool first. That way you don't have to toss it if you heat it up enough to denature the amylase ;)

Yes. In brewing (beer), after the wort (boiled grain water) has been heated to the right temperature, it is let to cool. Then, you add the yeast to start the process of fermentation. The term for adding the yeast is “pitching”.

Thanks so much, Mike! We've been spending so much money on first, oat milk creamer, then when my son figured out actual oat milk was just as good in his coffee. I tried this yesterday and it came out AWESOME! Tip for everyone - I just got a metal strainer for quinoa, and it worked perfectly instead of something like cheesecloth (tried cheesecloth first).
I'll be making this all the time now. My son is celiac, so all I need to do is make sure the oats and the digestive capsules are gluten-free. One less headache.
Hey Mic! Not sure if anyone else already mentioned this, but as a biologist who has worked with plenty of enzymes and studied their dynamics, here's a quick explanation:
Enzymes are biomolecules which can break down certain other molecules. This process relies on its physical shape and structure. When we look at a graph which would show the temperature on the x-axis and the activity on the y-axis it would look somewhat like the beginning of a rollercoaster, as you increase the temperature all molecules move more and more quickly, leading to more and more collisions between the sugars and enzymes. All of these collisions which happen all the time have a certain chance of damaging the enzyme in such a way that it will no longer be active! As the temperature increases, the amount of enzymes which are not functioning anymore increases too, leading to the fall of the activity after the apex (optimum temperature)
Cooling an enzyme keeps its shape, thus it will remain to function (and become more active once the temperature is increased again). As mentioned, heating the enzyme damages is, which can't be undone.
Fun fact: The optimum of all of our enzymes is pretty much equal to our body temperature :)
Since I failed science in school can the enzyme work in the oat milk without heating it up?

It’ll probably differ depending on the exact enzyme you’re using 😅 But in general: if the temperature is lower than the optimal temperature of a specific enzyme it will still work (albeit a bit slower), if it’s hotter than optimal the enzymes will breakdown (denature) and stop working at all.

There was actually a lady who made oat milk with enzymes over a year ago. And that's where I got the idea originally. And that's where sauce stache got the idea because her video is here on youtube.
Yeah. That's what I was thinking too. Though, she incubated the nonblended oats with the enzymes, RINSED the oats after incubation (Oh Man XD) and then blended up the oats with water.
@@PinggWingg so do or don’t rinse them? I prefer the non-pre rinsing bc I hear that’s what makes it more slimy but if we add the enzyme/amylase would it need to be rinsed prior to? Or stay not rinsing it?

Yesss for this video; I have avoided making my own oatmilk because of the slime factor. So pumped to try this out, esp the barista edition.
I do not miss the winter/late autumn in the Midwest...never had it checked out but definitely had some sort of symptoms of SAD when I lived there.
I can recommend making your own Golden Milk with fresh ginger and turmeric (and whatever spices you want (some pepper ofc)) and freeze it as ice cubes. One ice cube = one pot. Just be aware that after blending tumeric your blender won't ever look the same again.
Or your countertop, or your fingers, or…your life.

Yay, great news on how to make oat milk. For hot chocolate one could also use carob instead of cocoa. Why? Taste and texture wise on eye level with cacao/cocoa , carob is rich in Vitamins A and B, iron, protein, potassium, and a great source of calcium. Carob also contains polyphenols which are powerful antioxidants.

I've been doing this a while, don't buy the capsules. You can buy amylase from most beer & wine supply stores cheaper and it's just amylase. A pinch of salt goes a long way too.

You can buy powdered amylase for wine making, although I generally use pectolase for wine as amylase is for ingredients high in starch.
That was a saga, lol. You've gotta add some black pepper for the turmeric to be bio available. I put some black pepper in my overnight oats with turmeric plus some other spices (cinnamon, grated nutmeg, brewer's yeast, matcha). Yum. Turmeric plus pepper every time for bio availability of turmeric's powers 👍🏻

Hi thanks for the recipe! Have you tried foaming this milk? I'm hoping to make my own oatly replacement but mainly use it for lattes/cappucinos
I make my own Oat Milk with just water and Organic Oats, and I add a handful of mixed seeds and a couple dried Figs/Prunes etc. The ONLY thing is it settles in the fridge over night but a quick stir or shake and it’s as good as any Shop bought Plant Milk. Also packed full of nutrients from the seeds and dried fruit etc.

did the homemade oatmilk taste like theirs to an extent?
@@veganpowergrab no not really because oatly brand uses a lot more, this version is simplified but it tasted nice and it worked well with my oats. It's time consuming though and it doesn't last long in the fridge. So I recommend if you are sure you will be using the homemade oat milk everyday for porridge, tea or whatnot.
My older 8 quart Instant Pot Duo maintains a very nice 150*F when run on the "keep warm" function with 4 cups of water in it. That would seem to make it a pretty ideal amylase minder. I've got a test batch in it using ~ 1/16 tsp pure alpha amylase at the moment.
Hugh: so can you give us an update on how the set up plus the 1/16 tsp worked out for you? I’d love to know.
This is great! I was wondering, as amylase can be found in sourdough starter as well, if there's any way to go with that instead of a pill of enzymes? Mostly because where I live they cost 30$ for a few pills... I googled for hours and couldn't find any info on this subject!
This was uncharacteristically funny! I no longer have a meat thermometer, but I have one of those little, battery-operated probe ones they gave out in cooking school, which can be purchased cheaply in many groceries(hint-hint). They come in handy for stuff like this, and increasingly, new gen analogues that require cooking to the same temp as the animal part requires. TFP : )

My WFPB Hot Chocolate Recipe
1. Fill your mug of choice with plant milk and pour into a pot.
2. Turn heat to medium low add each of the ingredients in steps, whisking in between. The timing here takes a bit of practice. The goal is to have the milk heated by the time you are done adding ingredients. Overheating the sweeteners makes them break down.
3. Add 2 TBSP of Cocoa Powder. Whisk until mostly combined.
3. Add a pinch or more of salt, a few shakes of cinnamon, and a dash of vanilla extract. Whisk until the color deepens or you see the mixture change from the salt.
4. Add 2 TBSP maple syrup. You may need more or less depending on your syrup. I prefer a rounded, robust syrup for this. The milk should be almost to temp at this point.
5. Add a TSP of agave. Taste test and adjust if needed. Pour back into your mug. 😊
I feel like this recipe tastes even better doubled and shared with someone. I hope I can make it with some homemade plant milk soon, thanks Mic for the video. 😁
