牛肩肉1.5公斤 - 1.5kg of beef chuck
紅洋蔥1個 - 1 red onion
蒜頭10粒 - 10 cloves of garlic
黑胡椒碎3湯匙 - 3tbsp of coarse black pepper
鹽2湯匙 - 2tbsp of salt
碎番茄1罐(或3個新鮮番茄)- 1 can of diced tomatoes (or 3 fresh tomatoes)
紅酒1支 - 1 bottle of red wine (preferably Italian)
迷迭香2條 - 2 sprigs of rosemary

Hi Bob, I tried the recipe last night. It tastes really good. I made two adjustments to the dish. Instead of can tomatoes, I used fresh ones. And I also couldn't find a bottle of Italian red. Merlot was used instead. And still I think it smells and tastes great.
其實Chianti Classico 只係 Chianti 入面其中一個產區。同質素冇乜關係。只係大家嘅種植同規管唔同。簡單黎講 Chianti Classico 普遍都比較果味重而濃厚。如果配搭你呢味餸就會超正。
下次你再整可以索性買兩支一樣嘅Classico。一支用黎煮。另一支等你焗個陣就開定原瓶抖佢六粒鐘氣。

質素就好難講, 始終因人而異. 但總體嚟講, 一支Chianti用到嘅提子可能系來自任何一個Chianti產區內嘅農場. 而Chianti Classico嘅提子就全部只來自Chianti Classico果一個小產區. 而且監管制度唔同, Classico有相對高少少噶standard. 所以理解為質量會相對好少少亦都無錯. Classico比普通Chianti貴的確又係事實. 至於用來煮餸噶話, 用支Chianti嚟煮, 然後拿支Classico嚟送飯就正曬!!

今晚在家做这个请客,味道超好的;放了整瓶的Chianti Classico, 现在晕晕的,哈哈~~
上星期六做了這個菜宴客(主要用牛尾),頭盤跟你的Tuna Nicoise Salad,吃得人人很開心,可惜來不及影相。因為要炆好長時間,而且知道這種菜式隔日吃更入味,所以特別做多些,我老公吃到第三天還是吃得lam lam 脷。Thank you for your recipe, Uncle Bob!!!

I went to Italy this summer, and I stay in Venice, Florence and Rome. I love Venice the most, and Florence was quite and lovely but very tiny city, I think two days are enough but we stay 4 bcoz we were shopping a lot. Rome is nice as well, again 2-3 days are fine. Love all of your video but i am too lazy to get the matrials and cook lol

我在Piedmont大區的朋友說吃很多肉的菜的時候他們會用Barolo。但是一瓶一般的Barolo D'alba都是40來歐元了。拿來做菜我覺得好浪費的哈哈。。

Chianti 提子係Sangiovese, 以果味重為主,單寧柔和,尾段 medium finish
Sassicaia, 50&50, Brunello di Motalcino呢d都係好野黎嘎

Haven't tried peposo before and this looks easy to make. Definitely going to give it a try. Have u made the dish in pressure cooker to speed it up? Just curious if that would impact the flavors. Anyway, Rome is my favorite place to be. I also have dreams to go back there one day. 😊
I'm never quite sure about pressure cookers, and this dish is best if you slow cook it IMO. Ditto on the Rome part too. Gotta go back soon :)

I tried this recipe couple of weeks ago. 2 tbsps of salt is too much. The beef turned to be very salty. Maybe it is because you didn't count the canned tomato is also salty? But the dish still smelled insanely good in the kitchen.

In this case I would suggest you to scoop out the "soup" then add the red wine. Tomato flavour would still be there :)
