It must have been a hard work.

It would be something they get used to over time. They would probably start with wearing cotton gloves under the latex ones until they build a resistance to the heat. They would be opting to only wear minimal gloves to make working easier. It would be a skill practiced for a long time.

Its sugar. I doubt there is much flavoring if any. The color is all food coloring. So it tastes like rock candy or a lollipop that doesn't have any added flavor.
