Braised Blade Steak with Creamy Sauce (Keto or Carnivore Diet Recipe Ideas)

  • BEEF BLADE STEAKS are a budget cut of meat that can make eating beef on carnivore more economical. They are delicious and tender if you braise them. In this video I do just that and make an optional carnivore cream sauce to go with it.
    If you are doing Keto you can saute mushrooms for the sauce and serve the whole thing with cauliflower mash.
    The braised steak with the sauce is a great Carnivore dinner recipe idea!

    Braised Blade Steak
    -------------------------------------------------
    2 large beef blade steaks (mine were about 1 lb each)
    2 tbsp melted tallow, bacon or duck fat
    1 tbsp kosher salt
    1 tsp black pepper
    2 cups beef broth
    Sauce
    --------
    1/2 cup pan juices
    1 brick cream cheese (cut into pieces)
    1/4 cup heavy cream
    Preheat oven to 350
    Brush steaks with melted fat and sprinkle both sides of the steaks liberally with salt and pepper.
    Sear each steak in a hot frying pan for about 2 minutes per side.
    Place steaks in a casserole or baking pan.
    Deglaze the same hot pan by pouring in 1/2 cup broth and scraping up all the brown bits from the bottom of pan. Pour this over the steaks.
    Pour another 1.5-2 cups broth into the casserole pan.
    Cover pan tightly with foil and bake for approximately 1 hour to 1 hour 30 min depending on size of steaks.
    To Make the Sauce:

    Once you take the casserole pan out of the oven, remove about 1/2 cup juices from the pan and put into sauce pan.
    Mash the cream cheese pieces into the hot pan juices until smooth
    Whisk in about 1/4 cup heavy cream and stir until smooth.
    Spoon sauce over hot slices of hot steak

    The deglazing of the cast iron pan is how my dad taught me to clean the iron skillet. Then you can just rinse with water, put back on burner to dry out and oil pan back down to season. Cast iron pans are great.

    I love this! I am a huge fan of braising meat, especially cheaper cuts that tend to have a lot of connective tissue (collagen) that needs time and moisture to break down. They are delicious to me and IMO make the most luscious drippings. Love that sauce, I'll definitely try that.
