  • Hi there! I'm Itadakimasu Recipe and today's video, I'ill introduce you to the traditional Japanese iron kettle, known as tetsubin, and show you how to properly care for it. The tetsubin is made using a special technique called "kama-yaki," and its interior is left unpainted. Therefore, before using your tetsubin for the first time, it is important to create a "yuaka" layer inside the kettle to prevent rusting. Yuaka is a white film created by the crystallization of minerals like magnesium and calcium found in water. I'll also share tips on how to remove rust if it occurs.     [Creating limescale buildup]
    Prepare hard water with a hardness of around 300mg.
    Pour the hard water into the iron kettle and boil it over medium heat for 20 minutes.
    Repeat this process three times.
    [How to use an iron kettle]
    Fill the kettle with water up to 8/10 full.
    When boiling water, slide the lid slightly off.
    Once the water has boiled, turn off the heat and put the lid back on.
    Since the handle and lid are hot, use pot holders or oven mitts to handle them.
    Immediately pour out any remaining water in the kettle, remove the lid, and dry the inside of the kettle.
    Do not touch or wash the inside of the iron kettle.
    [How to deal with rust]
    Prepare tea leaves or tea dregs, which should be odorless.
    Stuff the tea leaves or tea dregs into a tea bag.
    Even if rust has formed, do not polish the inside of the kettle.
    Put the tea bag in the kettle and add water up to 8/10 full.
    Leave the lid off and boil for 20 minutes. The water will turn black.
    The tannins in the tea and the red rust will combine to form black rust.
    This will help settle the red rust.
    When the heat is turned off, add more water until the kettle is full.
    Leave the tea bag in the kettle.
    Leave the kettle for half a day.
    If the color of the rust is still a concern, repeat the process 2-3 times.
    Once the rust has settled, rinse the kettle.
    If the water that has been boiled is clear, then the rust care is complete.
