[SUB] How to make cheese garlic bread :: fluffy and chewy :: garlic sauce recipe

  • *** Please note that I have written down the expected questions as TIP.
You make your own fluffy bread, and the bread you eat when it's warm is really delicious.
The combination of the subtle garlic scent and the ever-stretching mochi cheese is the best.
It's not difficult to knead so let's make it together~
*** Weighing is scale (g), rice spoon (tbsp), teaspoon (tsp) weighing.
    [Diameter 22cm]
    ✤ Ingredients for dough
    -200g Bread flour
-1 Egg (can be omitted/replaced with milk)
    -20g Sugar (2tbsp)
    -4g Instant yeast (1tsp)
    -3g Salt (1tsp flat)
    -80ml Warm milk
-30g Unsalted butter at room temperature
    ✤ Garlic sauce
    -1tsp Minced garlic
    -1tsp mayonnaise
    -1tsp sugar
    -0.5tbsp Chopped green onions
    -1tbsp Egg (can be omitted)
-13g Unsalted butter at room temperature
    ✤ Topping
    -140g Mozzarella cheese
    ✤ TIP
    - I baked for 10 minutes at 170°C (338°F) in convection mode.
    - Bake for 10 to 15 minutes at 180°C (356°F) in normal oven mode.
-Use bread flour as much as possible. plain flour has a less fluffy texture.
-Fermentation can be done by soaking in warm water.
-The airfryer temperature is similar to that of the oven. Adjust the temperature while looking at the color.

i tried making this, and it was super good! i didn't expect it to be easy, and i was expecting my result to be hard, tasteless bread (since that's how my other beginner attempts had turned out :')), but it turned out to be very fluffy and soft! i didn't have a 30 C setting on my oven, so i left mine in the fridge for about 3 and a half hours to rise before releasing the air and making creases. i REALLY recommend this recipe (and i also recommend really getting your garlic sauce in between the creases, because my stubborn self didn't follow the directions by only making shallow creases and ended up with very minimal garlic and cheese flavor lmao so i made the remaining garlic into a sauce instead), thanks so much for the recipe!! ♥
EDIT: tip: only use the fridge tip if you live in an area hot and humid enough that it can't stay outside for too long. i live in a tropical country and my bread dough tends to turn sour when i leave it outside or in the oven, so it definitely depends on the weather/climate you live in! read the replies, they're super helpful!

I made this, and I'm actually coming back to comment bc it was exactly as easy as it seems. It was the easiest, most well behaved bread I've ever made, entire process was done in two hours. It is a fairly small dough (200g s around 1+1/2 cups) but the portions we're still really good for 4 people. A little note, u can never add too little cheese, but if u add more cheese, consider switching to the broiler for the last minute or two to make sure it's nicely browned and the mound of cheese u may or may not have added properly melts. Also 1tsp minced garlic is like maybe two cloves, generously. U could easily do three, even four cloves. Also added oregano, only bc the green onion looked kinda lonely. It was delicious and I'm making it again tomorrow for a family gathering.

    • @ellimiller8620
      @ellimiller8620 Před 3 lety +24

@@incredibleme8473 maybe about 3 minutes to get back to the right consistency after adding the butter, but I did end up kneading it for an extra minute or two past 5 min to get it to a good smoothness level. But definitely let it have that 10 min bench rest. I'd say when in doubt, prioritize kneading less over making it smooth. The more u knead the denser it'll become, whereas sometimes u can knead for 30 minutes and it still won't be smooth (speaking from experience). Also, please make sure u have a scale. The second time I made this, I didn't have access to a scale, mismeasured the flour by maybe 20g worth, n by the time I realized, I ended up having to over-knead. Luckily still tasted good, tho!

    1. I used bread flour 650 like it says - this takes more time to grow because it has more gluten. Flour 000 works probably better or all purpose (550).
    2. Mine took 1:30 h to grow - be patient, it is worth it.
    3. Next time I will use more butter garlic mixture but this is just my taste to have it more garlicy. :)

I have made this about 2 times now, and this is my third. The last 2 were a fail. I think it was bc my oven does not go lower than 170F. This is my third, and it looks promising. I will update u if it works. Btw my last two, I over-baked for the fermenting part. Bc of that I couldn't add garlic sauce. The other time it ended up flat. I hope it works this time. Love ur recipes!
    Update
It worked. Not as well as hers tho. I used the wrong cheese and undercooked it a bit, but the recipe is great! One tip tho. Double the amount. It is very little if u dont. Still great tho

I just made this recipe in an air fryer (I don't have a toaster oven)! Here's how my experience went as a beginner baker:
This tasted really good! Though like I've seen other comments say, make your creases pretty deep! You'll probably really want to get the sauce and cheese between the cracks to make it more flavourful.
My bread came out way darker than the video but I'd say it's probably cause I added a lot more cheese (like all over the top with mozzarella and cheddar cheese lowkey looked like cheese pizza haha) and also my air fryer temperature settings could only be changed in increments of 10ºF. I ended up baking it at 340ºF for 13 mins (it was already pretty brown by that point) but it was still slightly raw inside so I baked for another 3 mins at 330º.
Overall kneading this was way easier and more successful than my attempts at kneading dough for milk bread lol. Definitely will attempt to make this again and recommend others to try this! ^_^

In Turkey it has a similar sort of bread. It's called "Ramadan Pita". During the month of Ramadan, which is sacred for Muslims, Turkish Muslims generally consume this bread. But like you do, it is cheddar etc. There are no ingredients, just a bread recipe similar to this one, so the bread is shaped and sprinkled with egg yolk and sesame seeds. It tastes really good.
