How to Make Nitro Espresso Old Fashioned

  • The recipe is 2 oz of espresso, 0.5 oz rich simple syrup (demarara here), 3-4 dashes each of Angostura and orange bitters, and about 10 drops of Luxardo maraschino liqueur with some whole cherries mascerated in it. All are combined over ice and stirred to thoroughly chill, then strained into a whipping siphon. The siphon is charged with a 2 gram nitrogen cartridge and shaken and conditioned for 5 minutes before dispensing. Garnish with orange peel and serve!

    You can squeeze (smash) the tip on the needle smaller/flatter.

      This is a great tip! Just flattened an injector tip with pliers, and using cold brew, the foam on top was even and small and lasted a long time as well. The cascade is even better than what I've gotten from cafes.

      @@primacoffeeequipment it was awesome & opens your mind even further to other cocktails using Nitro. My daughter is a chef & has a very unique espresso martini recipe which I will drop here over the coming days. Also, did you see the Kickstarter campaign just launched for a Nitro Coffee Keg.

    Do you feel comfortable using the .5 liter thermo whip vs. the reinforced nitro whip container? I have both, but the nitro whip only comes in a 1 liter

    This is SO helpful I just ordered an ISI Gourmet and couldn't find ANY info online about using it with a nitrogen cartridge!! I'm so scared of it exploding on me haha, I Just want a 2 gram Nitrogen cartridge right? not an 8 gram?

    Loved the video! More like this to come in the future? What was that nitro pod you put in the shaker? Same ones you use to make whipped cream?

      You bet! Steve likes to play around with lots of coffee recipes, so we share them whenever we can. The gas cartridge is pure nitrogen gas, so not the usual nitrous oxide that you would use for whipped cream. We put a link in the description for the cartridges we used.

      From the Hatfield's FAQs: "The cartridges are single use. Simply insert the cartridge, serve the drink and replace for the next drink. For coffee and tea, you may get two servings from the device. For smaller cocktails you could get 3-4 drinks from a single charge."
      And we have found this to be accurate. If you are looking to make more drinks in a shorter period of time, a keg might better suit your needs.

    Have you tried with Cherry Heering instead of Luxardo? Interesting move with the macerated cherries though to get actual cherry flavor. Did you use luxardo cherries for that? I bet the syrup from the jar would probably be pretty good as well.
    Not bad though. I bet shaking it up would produce a nice thick froth as well for those of us without the siphon.

      We have not tried it, but Cherry Heering could be a great substitute. The cherries were fresh, sour black cherries, but you could certainly sub your favorite cocktail cherries if you like. As for shaking, it would be a fine substitute. The foam from shaking wouldn't be as dense as it is here, but you could try to incorporate something like aquafaba or tapioca starch to help build more dense foam.

    Are those cartridges a standard size? I’m thinking about splurging on the nitro whipper because that’s a one-time payment, but I want to use regular cream whipper NO2 charges with it.

      These are standard 8 gram cartridges, but they won't have the same effect in a regular whipping siphon. The Nitropress has a special nozzle that creates cavitation and brings N2 into solution, whereas whipping siphons have a mostly open nozzle. You might get some nitrogenation, but not quite the same.

    Are the nitrogen cartridges the recyclable? As much as I love nitro infused coffee, I'd hate to toss the empty cartridge into the garbage bin after making one drink.

      Hi Jerry! The dispensing tips are made by iSi, you can find them by searching for "iSi Injector Tips." The one used in the video is the 3 mm short tip.

    Hey so you are using the nitro chargers listed in the description with the iSi gourmet whip? I have the same iSi whip and I want to make sure the nitro chargers are compatible

      That's correct. The chargers listed in the description are the ones we used during the shoot. iSi now also has their own siphon product for nitro coffee with its own compatible cartridges, but we have not tested or used those.

      Nitrous oxide tends to create larger, more fluffy bubbles. You will have a much more airy texture, rather than creamy and dense like a stout faucet.

      It's quite delicious! As we mentioned in the video, we used plain nitrogen gas, so the drink is nitrogenated and not carbonated. Nitrogen is flavorless and doesn't react with anything in the coffee, so its sole purpose here is to add some texture. And yes, while we do add bitters, we also add rich simple syrup and a maraschino liqueur, so the final flavor balance is not too bitter or sweet. If you've ever enjoyed an amaro, you would probably love this!

    I appreciate the attempt. I'm sure it's tasty. The nitro method seems to ruin the practicality of making this drink, however. If the drink sucks without the nitro, I'd say back to the drawing board. Great attempt, though.

      Hard liquor with 4 shots of espresso is not a good idea. Alcohol and caffeine basically have opposite effects on the CNS. Consuming copious amounts of both together can't be healthy. At least I wouldn't drink it.

      The effects of drinking alcohol and caffeine together shouldn't be greater than the sum of the two combined.
      People have been mixing coffee and alcohol together for ages... this isn't a new concept and besides, they taste GREAT together.
      Ever heard of an Irish Coffee cocktail? Delicious!!
      Point is, if you're going to make a "cocktail" without booze it needs to be labeled VIRGIN.
