I use the flour mill when I got more into cooking since you can't really plant in winter.
Ps: Also some crop require the scythe to harvest them.

Is it a solid idea to get animals ASAP? Trying to figure out the best way to set myself up for making money.

I believe it is better to get animals at least before winter so you can have something to eat for winter, other than walnuts, and get started on the pillars since you need gold animal products for one. You only get eggs for female hens though. You can't get eggs unless you have chicken coop.
The pirate ships have exclusive items like paint and steel ingots; which you need for house upgrade and some crafting items. The house upgrade comes with an icebox so I put more priority on that in the Fall.
Edit: Using the best fish lure during Summer in the lake by the Mine and Mayor house has the most expensive fish then for easy money. The eels sell well.
