My thing with josh he is a traditionally trained chef they don’t teach us bbq so unless we learn on our own we tend to way overdo it culinary school taught me how to run a grill and a smoker but never the nuances behind getting a great bark on a brisket and maintaining the fire on a offset that was something I had to learn on my own time
What I love about your format is that you don't just get one bite and done, you try it and try multiple pieces, even if it's not something that's well done

Thanks bro. I'm using a heat-treated and well seasoned file cabinet smoker. We re playing with pork shoulders and ribs. I'm not there yet for a full brisket but this video was very informative.

Hey Ant's! I have a Brisket question! If I wanted to add extra flavors to my brisket such as some Wagyu talo, maybe a sprit of pineapple juice would it be okay to do so after the bark has set it has been fully wrapped during the rest period to negate bad bark, or burnt sugar, Would this be okay?
burning point of sugar is 350 so if you're cooking low and slow this shouldnt be a problem. but your brisket may taste a bit like pineapple lol
Like your learning style, learn from the pro's, experiment, then nail your personal perfect brisket (or try try try and never get there lol, but the journey is still filling)

I'm not going to bad mouth Josh, he cooks great food. I use his Nashville hot chicken recipe often and it's delicious. He definitely made mistakes on his video and 1 thing I noticed here is you did not trash him. Only gave information on what to do and why. I hope he learns from this and I'm sure he will. He got called out by uncle Rodger for his Thai green curry and admitted he was wrong.
Staying humble is how we can accept were wrong and learn from it. No one is a master of everything.

Ant, you mention to not rub the rub, which makes sense, but can you also explain why this doesn't matter when you pick up the brisket, the way you placed it into the container at 2:29 is kind of causing the same thing. Or is it that this is just so negligible that it doesn't matter, the question being how you pick and place your brisket matters y/n?
it only matters during the application, once the coat is on, its already "even". But also the side that was in the tray is the bottom side, I am only concerned with the rub and bark on the presentation side (fat cap).

What bothers me about Josh's content, and is one of the reasons why I stopped watching his stuff, is that he goes too hard with ingredients and methods to be needlessly cheffy. Some great examples here are that he clearly isn't an experienced BBQ cook, yet he still chose to cook a tricky meat like brisket on a tricky smoker, and added needless steps like broth sprays and a broth bath with the end result probably being closer to a slightly smoked pot roast.
Great comp, was prob more like a pot roast. Doubt it had much of any smoke flavor since he wrapped it so early
