  • Soup, Soup, Soup. We adore having a range of soups on our pantry shelves, it is a simple task for the kids to grab it off the shelf and warm it in a pan. They enjoy it as well. We always have a few different choices!
    I can also thicken a jar up to make a pie filling, or a creamy topping to baked potatoes etc, so many uses.

    I never peel washed potatoes, only dirt covered ones. I did see Meg from Hollar Homestead chop up her home grown potatoes for chips without peeling them. I admire your canning process, it's so practical and economical. The lid colours aren't a problem as long as they work. You're teaching me so much, especially being able to store food without refrigeration. I want to get a trailer and travel around Australia, my husband, the workaholic, doesn't want to retire early, but I say there's more to life than work!

      I'm happy to just give home grown a scrub and use them skin on, but not in jars, too much risk of something being on them that will sit for too long in the jars I reckon, you'd have to REALLY clean them, but peeling would be easier! :D

    Nyssa! That was awesome!! Homemade fast food. I love to can. We have flies bad too, probably because of all our animals. I was helping you swat at them too. Watched this video 3 times. I want to can a full meal like this. I usually just do ingredients. Thanks for showing us new ideas!

      The meals are great for busy days and in winter, fresh bread and soup is a very regular meal for us lol! The flies are horrendous!

    My son fell in love with Campbell’s Chunky Chicken Noodle soup so I dissembled one jar and put each ingredient in a separate bowl to measure. Now I have a baseline for the chicken soup I can for him (although I liberally adjust the celery/carrot amount and sometimes even add home-dehydrated mushrooms). Then I cook up and dehydrate egg noodles he can pop in as he warms the soup. I even put a sized scoop in with the noodles so he knows how much to use for a 1L jar of soup. 😁

      That sounds awesome! My kids pull one jar of a meat based soup and one with a veg base out and then a jar of stock and pour it all in a pot and add a bag of macaroni noodles lol. That' feeds the 6 of them comfortably and is superb in winter!

      I made a roux the other night using the liquid then mixed it through and put it in a family pie crust. Was superb that way too! :)

    This looks so good. I guess I need to get a pressure cooker. I make soup but freeze, I usually give most of it away, because if your making it, a big batch seems worth the trouble. I love soup ready to go. I made some during our snow storm. It was cold after shoveling but the soup warmed my
    inside. This would save me space in freezer. 3 jars is not to bad, plus after all the work, it would be yummy to taste. I would love to see you make a pot pie sometime.
    When you smoke the chicken, do you put a rub on it or is it naked? Just curious. I thought all those chickens in your pans looked beautiful. It is always fun to hear the Roosters when your cooking.

      When I do the whole chooks I just put a half a lemon inside them and sprinkle with salt. I use a rub on breasts though, cause they dry out otherwise! :).
      We don’t have the freezer space to use for soups, and I always forget to pull things out to defrost, this works really well for us! :)

    Hi there ,I'm loving you vlogs.More talent with each video.Your family is blessed to have a hard working mama,making good food.I grew up eating mince&potatoes most nite,by the end of the week ,we were happy to have ham hocks sat&sun.Can u guess we're I grew up?❤🇨🇦

      Heh, yes, I have worked hard to have some shelf stable stockpile so that while we don't get fresh stuff at the end of the month we're still getting some variety, it has been an ongoing process and I'm glad I have managed to get there! :D

    Citronella oil or candles will help with the flies, but that soup looked so good, I've just ordered some more lids for my jars so i can make some.

      We burn the citronella/sandalwood coils a lot, but it only helps marginally, anything is better than nothing though!

      I have a battery operated Ryobi one that I use to do just that, it definitely helps! Some flies are just very adamant they want a taste of my food lol

    Yum and they look far prettier than my raw pack chicken soup. Why is the potatoes soaking in lemon water ? Is it just because they were cut a while before packing? We've had 2 cool morning over the last few days , its been amazing! Thanks lovely 🤩

      Yop, purely because I had them sitting for a while but we regularly add lemon juice to our soups too, so I don’t mind if there’s a bit of carry over in flavour! It does help with the starch a little too I feel like!
      I had to put a cotton blanket back on the bed!

      They're so so annoying, but I've learned that if I calmly deal with them, I get less frustrated than if I am angsty at them hehe

    They could be my clips it's impossible to keep them shiny I suppose we could hit them with steel wool but whose got time for that and it would need to be done everytime

      Yop! I prefer to just clean the jars/lids rather than spend all that time on clips and rings lol. But I know some people are funny about it! It it affected my rate of seal I’d take more care but it doesn’t seem to!

      Tbh I just watch my jars, I don't have a lot of choice, we'd like to eventually build an insulated room, maybe with a coolbot etc and have somewhat of a cool room, but for now, the jars etc just have to deal, I just go through and test my jars regularly to make sure that no lids have popped, I assess each jar as I open it, make sure it breaks seal nicely, no discolouration, no bad odour etc.

      I don’t use anything, I just thicken when I open, thermflo is so expensive!

      @@tawanajackson5545 Yeah, I find it unnecessary, I just make things as is and then if I want to thicken them when I use them I just do a cornflour slurry, or whatever to thicken it up! Woohoo, gardening is so thrilling even when it sucks lol

      I have a dual fuel master built smoker :) it’s great! I would like to build myself a larger one at some point though :)

      It depends what we're serving with it, but at least 2, sometimes 2 and a jar of just stock if I'm adding pasta to it! :)

    Hi Nyssa I just came across your channel and I notice you do canning. I live in Victoria I just started canning I have a few questions please since we live in the same country. I wanna can beef or chicken stew my jars size 1.5L and 1L what timing do I use for these jars size. I know quart jars is 90min and I have to add 5min. It’s really hard to get mason jars from American. Please help if you can x

      The rule of thumb is quart plus 20% for larger jars, so my size 36 Fowlers jars I do for 108mins :) they are 1.2L :)

      Sorry if I had a smaller jar like 500ml and a pint jar is 473ml do I add 20% timing on my 500ml. Lol sorry if I’m confusing you 😅 I know pint takes 75min.

      @@ponwilson912 I do my 500ml jars at pint times, I don’t think the variance is enough to worry about, they’re never full to the top anyway! I class my 500ml as pints and tbh I class my 1l as quarts, it’s only if they’re over 1L that I add the 20% :)

    I don’t know how you put up with the flies, I get annoyed when there’s only a couple in my house and you are basically in an open air kitchen. It would drive me to insanity.

      You get a little acclimated to it I think, the first year it was horrendous, then I put a few methods in to make it a little easier and each year it has become a bit more tolerable! :D
