- Tinned Fish Talk Ep. 7 đŁ Fishwife x Fly By Jing Smoked Salmon $13
6/10 â Unique but overhyped.
Taste 7ïžâŁ The chili crisp is the star of the show here. I love how fragrant and warm the flavors are in this tin. The smoke flavor is pretty strong with lots of brown sugar for a spicy-smoky-sugary-barbecue-y vibe. One caveat to this is that I found it much saltier than most other smoked salmon. The salmon flavor is also a little lost among the other competing flavors and spices.
Texture 6ïžâŁ I feel pretty personally conflicted about the texture of the salmon. Hot smoked salmon is certainly going to be drier than sardines, but I found the smaller chunks of salmon to be particularly dry and almost tough like jerky. I did enjoy that they keep the skin on, but I overall not my favorite.
Price 5ïžâŁ $13 for 90g felt way too steep to me given the taste and texture werenât my favorites. For context, the equivalent unit price of this is like paying $60+ per pound of smoked salmon. Thatâs more than double the price of my local farmersâ market smokery for hot smoked salmon. If you have a fridge, Iâd save my money and get hot smoked salmon at a local grocery store and my own chili crisp. An upside is that this seems approachable and fun for people who are hesitant about tinned fish, so may be a good gift item. I personally wouldnât buy it again at this price.
I also reached back out to the brand for details on the country of origin and the canner but was left on read. Itâs not unusual for a cannery to pack several brands or private label products (I love Trader Joeâs and Tiny Fish Co). This is a unique product but Iâd hate for people to spend extra money on solely branding for their other products. So do with that info what you willâŠ
Excellent review, thank you! Great serving ideas, both for the fish itself and for the oil/chili crisp!
I think this can is one of the few tins I can eat straight up. Best ever.
