    3 pounds tripe
    ¼ cup white vinegar
    2 bay leaves
    3-4 tablespoons olive oil
    2-3 cloves garlic, minced
    1 cup onion, chopped
    1 cup carrots, chopped
    1 cup celery, chopped
    3 medium potatoes, cubed
    2 quarts peeled tomatoes
    1 quart water
    3 pickled hot peppers, as desired
    ½ cup Pecorino Romano Cheese, grated
    Salt & Black Pepper to taste

    Who is this lady?
    Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
    Where does Gina get her recipes?
    Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
    Why is no one helping her in the video?
    Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
    Why don’t we buy her a new...?
    Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
    Who is behind the camera and behind the scenes?
    Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
    Does Gina read the comments?
    We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

      Exactly! I don't care what she's cooking. I'm watching. I admit I will never eat this on purpose, but I love watching her. I actually learned how to make pasta watching her. We don't buy boxed pasta anymore. I always learn something new from her no matter what she's cooking.

      So last night we went out best friends house. We were invited there to celebrate our 30th anniversary. Our dear friend Maurizio is a fantastic cook and he was surprising us with a great NEW recipe. He said this recipe is “GINA’S”. I introduced you to Maurizio years ago on CZcams and he loves following your recipes while he’s singing along. Well we’re trying to guess what the beautiful aroma was as we’re walking in their house. OMG GINA’s trippa first time he had made it. It was amazing. And as we’re having our dinner…. I pull up your video Gina. “Allo I’m Gina…. We just love you.     Oh my goodness!!!. My family made this when I was a young girl. My made would serve it with home made cavatelli. My grandmother used to tell me stories of how it was sold many years ago. Now you can buy it cleaned but my grandmother told me back in her day it was sold unclean and she would have to scrape it clean and boil it. Thank you Gina for preserving our Italian traditions. You make it just like my mother used to. Now I can learn from you because I don’t remember all the details. Grazie Bella Gina❤️❤️❤️❤️❤️

      That’s how my mother made it. Had to clean it herself, that was some job……….anyone remember Babaloogh….snails. …poor things would climb up the sides of the pot to get away from the hot water then fell into it anyway.

    This is the kind of grandma that will make you gain some serious weight. i can imagine her grandkids visiting her and she goes into full cooking mode, making sure nobody leaves hungry. I love her and look at that nice kitchen.

    My husband’s mother was born in Italy, her mother and father came to the US with all the children. Even after marrying my father in law they all lived in the same house in Philadelphia before moving to South Jersey. His grandmother lived across the street and his uncles and aunts all live within a few miles of each other. I showed this to my husband, Gina reminds him of his grandmother, sweet memories. My MIL was a GREAT cook, she could whip anything up, food was always GREAT. Thank you!!

    We cook it similarly in Portugal, less tomato, Portuguese chouriço, no celery and white beans. We eat it with a side of white rice. It is delicious! No cheese for us either and no pepperoncino, but of course little piri piri. One of my favorite dishes! BTW this is cow’s stomach, if anyone is wondering. Tripe to me translates more to intestines, which this is not… maybe just my lack of English language knowledge. Thank you for sharing!!!

    I lost my mother and my grandmother in 2020. This reminds me so much of both of them. You sound so much like my grandmother. I have such wonderful memories of watching them both cook and learning from them. Thank for bringing back such wonderful memories.

    Your Tripe looks fantastic. At home growing up we had it maybe 3 times a year with potatoes. There was a FANTASTIC Italian deli that made Tripe every Tuesday and you had to get there early before it was sold out.

    Carissima Nonna Gina Bella! I feel like we waited for an eternity for you to come back. I screamed when I saw there was a video from you! That was, until I saw la trippa!! Then, I wanted to run away with your grandchildren! I ate and loved la trippa as a little girl, along with la codeca, and capozelle! Not today as an old lady!     I made this some years back for my father in law, he must have been 95 at that time me about 55 . we sat down at the table and I said " hey pop when was the last time you had this?" He put his fork down looked me straight in the eyes and said " my mother made it for me" then had a big smile on his face. Made me feel so happy. Thanks for letting me share. Love you Gina!!!

      In Mantua, my hometown is made with no potatoes, more watery, like a soup! Trippe are good anyway You make it! Alla Parmigiana, alla Romana etc.

    Beautiful old world real food made with love and joy. Truly loved watching Mama Gina make this and I had no idea it even existed. I do love Mexican menudo, so this will certainly be on my list of things to cook soon! Thanks you, Gina. BTW, your cook book is fabulous! made the spaghetti carbonara a few nights ago; delicious!

      One of my favorite dishes, I'm Portugese I make mine very different, I add some meats and white beans and make it into a stew with white rice on the side.

    I was so happy when I saw your new video!! My grandmother cooked tripe when I was growing up; she would never waste any animal parts. She lived through two world wars! Food was scarce. She used to make hers in a white sauce with onions and parsley. I wouldn’t say I like tripe, but I love you! I would watch you cook an old boot so long as I could spend time with you! I would like you to know that I was raised in an institution for children who had no parents. We weren't taught to cook. All I know has been from my Greek mother-in-law and now you, over the past few years, that I've been learning from you 💕🌸💕🌸💕🌸
