Try my high protein omelette - Dominique Ludwig Nutrition

  • This is a fantastic hack. And one that actually improves the texture and flavour of the omelette.
    Most women feel at their best when they have around 25 to 30g of protein at each main meal. This helps to keep our energy and blood sugars stable during the afternoon and keeps hunger at bay.
    A simple omelette only contains around 12 g of protein (with two eggs), but by adding natural cottage cheese, you can double the protein to 24g as well as increasing the volume of your Omelette. This should easily keep you going for 4 to 5 hours.
    You can top it up further by grating some Parmesan cheese, adding crumbled feta or adding some walnuts to your plate. I added healthy fats to this (a.k.a. half an avocado).
    The difference this can make is astonishing. By adding just an extra hundred calories, and 12 g of protein you will find yourself feeling less hungry in the afternoon and less tempted to snack or make unhealthy choices when your energy levels dip.
    The second trick with this dish is to add 250 g of vegetables. These slow down the digestion of our food and put on the brakes.
    The combination of proteins, healthy fats, and fibre provides an obstacle course in the gut so that the energy is is drip fed to us over the course of the afternoon, rather than being dumped on us like a blast of rocket fuel.
    It’s so good, I’m going to share the recipe!
    1. Gently sauté 250g diced mixed vegetables in olive oil. I used half a red onion, one red pepper and some cherry tomatoes. Add salt and pepper to taste.
    2. Whisk 2 eggs, with 100 g of full fat, natural cottage cheese together in a bowl with a fork. Add salt and pepper.
    3. Remove the vegetables from your frying pan and pop onto a plate on the side. Add some olive oil to the pan and pour in your omelette mixture. Let it cook gently until the top is beginning to cook.
    4. Add your vegetable mix onto the top of your omelette, turn it over in the middle and serve.
    I have been adding cottage cheese to my scrambled eggs for a while now, and I’ve really been feeling the difference, so I’m glad this recipe has worked equally well.
