What are the material recommandations concerning gradients ? Is it possible to use subtle gradients in $mdc-theme-primary for example ? Another question I have, is concerning colour variation. When a brand has several domains / universes, would it be possible, or problematic to change the app theme (slightly) depending the part of the app the user is using ?

Flat design is part of the language... so no gradients for buttons cards and the so... Though I think it should be OK for page background or so.
The colors question have to do more with the brand than with Material... if your company have different color schemes worded in the Brand Guidelines for each section, then I would follow suit to keep brand consistency accordingly to the guidelines.

I love Google's design and the advocates... very cool. But Google did go on about expression and brand bouncing out when Material Design was introduced. And I was 100% certain those guidelines were way too easy for people to fall into and become ... well, boring. I am glad Google are refining and building on the design.

I think design shouldn't have guideline. I once used Vuetify for Vue and Material-UI for React for a year, but now I'm really tired of it. Every app I built, and many websites I saw, are almost identical. They have the same color, icons, typo and layout. I thought MD was fantastic, but now I think I need something new. Theming is a good choice, but maybe I could try some new CSS libaraies, especially something not that popular.

Why XML ? XML is much more difficult to parse than JSON. JSON is parsed into a ready-to-use JavaScript object.

It's too boring, Google material design is the same since 2015. You should invest on Microsoft design _retro_ (blur gray and pard colours).
