In order to use my carrots at home, I made carrot bread for a week. I stored several bags of carrot bread in the freezer, enough to eat for a while. This carrot dinner rolls recipe is egg-free, dairy-free, and butter-free, which is very suitable for vegetarians. Although it is not as sweet as bread with butter and milk, it has a light taste and is very soft. It is delicious and beautiful, and you can't even taste the carrots. This recipe is recommended for kids who don’t like carrots!
RECIPE:
Bread flour or all-purpose flour 300g
Instant yeast 3g
Salt 3g
White sugar 25g
Olive oil 30g
Carrots 150g
Water 110ml
How to make carrot dinner rolls:
1. Peel 150 grams of carrots and cut into small pieces, put them in a food processor/mixer, and add 110 ml of water to make carrot puree.
2. Pour 300 grams of bread flour or all-purpose flour in a large bowl, add 3 grams of instant yeast, 3 grams of salt, 25 grams of white sugar and 30 grams of olive oil or other vegetable oils, mix well and knead it until there is no more dry flour in the bowl.
3. Using the stretch & fold method, set the time, stretching and folding once every 30 minutes. This step is repeated three times, and then the dough is allowed to rise to twice its size (it takes about half an hour at 25 degrees C room temperature).
4. After letting the dough rise to double size, arrange it into a round shape, divide it into 12 equal parts, shape and round each part, and put it into a baking tray to rise until it is twice as large (about 30-45mins at a room temperature of 25 C )
5. Preheat the oven to 180 degrees Celsius or 356 degrees Fahrenheit ten minutes in advance. Put the fermented carrot buns into the preheated oven and bake for 20 minutes.
6. Take out the baked bread and place it on a grill to cool
Bake at 180°C / 356°F for 20 minutes

I just baked the bun and garnished with a carrot (cut out a heart shape) n I substitute with monk fruit sweetener
It comes out very good, texture is chewy and not sweet at all but I m not able to roll the bun as round as urs

Hi ,谢谢您又为大家update新作。这个折叠法,只把粉拌均匀至无粉状态,蓋起耒,每三十分钟折叠(共三次)即可,不需至面团光滑,对吗?
只要揉到看不到干面粉就可以不需要揉光滑,一共拉伸折叠三次,每三十分钟折叠一次,只要定好时间很简单做。

P.S. Can I use Stretch and Fold Method in all bread recipes? Kindly add a conversion of grams into teaspoon, tablespoon, and cup for easy measurement because I don't have a kitchen digital scale. Thanks
Yes, you can refrigerate it and bake it in the morning but make sure to refrigerate it for 8 -12 hours and at the temperature of 4 degrees C and not at a too high temperature. If the temperature is too high, the dough will over-rise and it won't taste good. The conversions should be in the description box down below or in the English subtitles.

我觉得没问题!只是注意要调整甜菜根泥的用量,因为甜菜根和胡萝卜的含水量不同,还有每种面粉的吸水性也不同,免揉面团一定要偏软些。

但我愛心跟叉子造型沒灑好,看似容易,實則隔行如隔山哩!
家裡充滿烤麵包香味,是幸福的味道啊啊啊啊!
下次用甜菜汁做不同顏色!
這次我的麵糰看起來比您的濕軟,揉成小糰後要發至2倍大我等了30分鐘也感覺應該只有1.5倍大(家裡室溫80F),讓我稍稍擔心,所以多烤3分鐘。

老師您好,我家溫度約30°C, 如果每半小時摺一次會否已發酵了很多?有影響嗎?
如果室温高可以每20分钟折叠一次,折叠三次正好一个小时,我试过差别不大。

请问醒好了的面团为什么会粘湿的?该怎么做呢
因为面粉吸水性不同,胡萝卜含水量也不一样,可能是液体部分太多造成的,我不知道粘湿到什么程度,试着用干面粉整形,手碰面团要轻柔些,只要能整成圆形就没问题。
我有用干粉整形哦,因为看到面团湿度跟你的不一样所以担心会不会翻车😂

这个面包在夏天室温下我最多放两天,吃不完就放入密封袋冷冻起来,想吃的时候提前拿出退冰恢复到室温可以直接吃,也可以在冷冻面包表面喷点水,放入180摄氏度预热好的烤箱烤5分钟,第二次烤过的面包要一次性吃完不要再冷冻了。
