Fish restaurant had to cut 2 oz portions from a 5 lb fish. After awhile I got pretty good at cutting 50 lbs. an hour. It was very restful, almost meditative. Then 2 oz had to be dipped and breaded. I enjoyed the narration. Most times I turn off audio on these but yours was nicely explaining what they're doing.
in regards to handling red hot mantle it takes a lot of skill to do that safely 1 wrong move can end in catastrophe such as a fire or that person receiving really bad burns
