    RECIPE:
    Prep Time 35 minutes
    First proofing time 20 minutes
    Second proofing time 20 minutes
    Cook Time 45 minutes
    Total time 2 hrs
    Makes one loaf of bread
    1 9x5x4 inch loaf pan.
    Ingredients:
    1 medium size sweet potato (8 Oz)
    3 Cups Water
    Dry ingredients:
    2 Cups bread flour (10 ounces)
    ¼ cup barley flour (1 Oz)
    ¼ Cup spelt flour (1 Oz)
    ¼ Cup oat flour (1 Oz)
    2 Tbsp cornmeal
    2 Tbsp quinoa flakes
    1 Tbsp whole flax seed
    1 Tbsp ground flax seeds
    (5 ounces whole grain mixture)
    1 ½ Tsp salt
    ¼ Cup room temperature unsalted butter
    1 Cup extra flour
    Wet ingredients
    2 Tbsp honey or brown sugar
    2 ½ Tsp instant yeast
    ¾ Cup light cooking cream or 3% milk
    ¼ Cup extra if needed
    For coating:
    ½ Cup crush roll oats
    1 Tbsp Flax seeds
    1 Tbsp Quinoa flakes
    Instructions:
    Preheat the oven at 350 degrees Fahrenheit
    Greased and lined a loaf pan
    Measure and prepare all the ingredients first to be organised
    Mix the coating (together set aside)
    Peel wash and cut the sweet potato into medium pieces
    Place it in a pot with the water
    Cook over a medium heat until the sweet potatoes becomes tender
    Drain off the water properly (very important)
    Allow it to cool down
    Place it in the blender with the ½ Cup cream or milk
    Blend until smooth, set aside
    Mix the honey and yeast in the remaining milk allow the yeast to activate for five minutes.
    Add all the dry ingredients in a large bowl along with the salt and butter mix well to combine
    Make a well in the middle of the dry ingredients
    Add the the puree sweet potato in the yeast mixture
    Mix to form a medium soft dough
    Add some flour on the work surface
    Place the dough , Knead for a 2 to 3 minutes adding flour if needed until it is not sticky
    Shape it into a ball of dough
    Place it In a grease large bowl
    Cover with a Tea towel
    Allow it to proof until doubled in size
    Punch it down
    Then shape it into a log shape
    Roll it in the oatmeal mixture
    Place it into a greased loaf pan
    Allow it to proof until doubled in size
    Bake until golden and finish
    35 to 45 minutes
    Let it cool in the pan then
    Place it on a tray to cool completely
    Serve and enjoy
    Notes:
    The sweet potato will have some moisture in it
    Because it is boiled
    Let it sit out to dry a little
    If using steam or baked potatoes
    You may need more liquid in the dough
    Having the right consistency in the dough is what will gave the bread its beautiful texture.
    Depends on your oven you can bake the bread at a lower temperature
    My oven is a conventional oven.
