      I was gonna suggest Kitkat myself! And I want an actual Kitkat too, not a dang Kebbler Fudge Stick (not that those aren't delicious, but they're not kitkats). No dipping a wafer cookie into chocolate and calling it a day (which is usually what people do). I miss Kitkats. T_T I loved Reese's a lot as a kid, but before I went vegan, I loved Kitkats way more.

    When I was little my brother had to raise money in the scouts or something and he had boxes of these things in king size. I literally ate hundreds of packages and just pretended like “oh, I dunno what happened. They must have just vanished somehow.”... not my proudest memory, but as someone equally obsessed, it’s nice to see someone appreciates the details enough to really try to recreate and capture them. Get that waxy chocolate and that over sweet, super salty granular flavor going. Recreating any fast food or snack in vegan form is an awesome and money idea imo. Also totally identify with growing up poor and the food factories being an activity. When I grew up it was the general mills cereal factory making life “interesting”... for severe lack of a better word...

  • @7he404guy
    @7he404guy Před 3 lety +4

    You distempered the chocolate with your double-boiler. Melt it at about 30-ish Celsius, or if you've accidentally distempered it then while it's melted put in some tempered chocolate (like crushed chocolate pieces) and cool it slowly. If it's distempered, you're going to get messy fingers trying to eat it and it'll be all melty and dull looking at room temperature. When it's cooling it helps to keep the temperature around 30-ish Celsius because that gives it more chance to temper and get the harder chocolate texture most people are familiar with. The full details are a bit too sciency for a youtube comment though.
    Wouldn't recommend microwaving personally, I just use a hair dryer even though it takes longer. But keep in mind that chocolate will start to burn around 90 Celsius. Of course, I'm not an expert in chocolate. I just did this exact same thing 6 months ago and happen to have a background in materials science.

      As a person who routinely burnt chocolate, I thank you for your tips. Mom always said, while she was cooking, "Patience is a Virtue." I get that now. Rushed chocolate is gritty and bitter. Perhaps I need a spliff before trying, to calm my mind. Doing chocolate is like a meditation. Even done wrong, it's not bad, but done right, it's a Path to Heaven.

    Oh, CANDACE.... You are now my Great Goddess of choice among the ladies and gentlemen I regularly watch. We are of one heart with Reese's. One question: Did you find Reese's Pieces as disappointing as I did, expecting them to be the same peanut butter as the cups? To me, they are just sickly sweet, with almost no chocolate aroma when breathing out ones nose, and the peanut butter is just wrong. My second and third faves were a tie for second, Peanut M&Ms, and Snickers. I learned around age 10 (1978) that nougat was just air, a way to sell less chocolate for more money, and started just buying either fudge, or Brach's chocolate covered peanuts. Then I noticed, in the early '80s, Brach's did that thing of reducing the ounces per bag while keeping the same price on the same size package! I've never quite been able to recreate either what you did here, nor the Brach's. I tend to burn my chocolate, because I'm impatient. But my fudge brownies with pecans (not walnuts) would make you wanna slap yo mama, especially when I add a tiny pinch of cayenne. Thank you so much for the effort you go to to make our world a better, brighter, tastier place between cradle and grave.

    I think powdered peanut butter would give you the texture mixed with regular peanut butter 🤷‍♀️

    I think Justin’s is a vegan brand. They have pb cups. Ultra-expensive, but still.... ❤️

      Theirs are close, but miss the texture of the p.b., and their chocolate is too dark. I plan on adding a splash of oat milk, or maybe Silk Almond and Coconut milk to mine, to make milk chocolate.

      Have you ever had (Justin's I think) sunflower butter with dark chocolate cups? So good! and perfect for us peanut allergic folks.

    I would be careful using chocolate that does not at least say 'vegan-friendly' - a lot of 'regular' sugar is processed using bone char. So unless a product says vegan, not going to take that risk yuk
