Spicy Chicken Enchiladas for Two

  • Super tasty and easy to make.
    Ingredients for Taco Seasoning:
    2 tablespoons chili powder
    1 tablespoon cumin
    1 tablespoon paprika
    2 teaspoons salt
    1 teaspoon garlic powder
    ½ teaspoon onion powder
    ½ teaspoon oregano
    1 teaspoon black pepper
    Ingredients for Enchiladas:
    ½ diced onion
    1 tablespoon butter
    12 oz. chicken (cooked & shredded)
    1 tablespoon taco seasoning (for chicken)
    3/4 cups of water
    Chipotles peppers in adobo sauce (7 oz.)
    1 can cream of chicken soup (divided 1/3 and 2/3)
    1 cup whole milk
    1 tablespoon taco seasoning (for sauce)
    Cooking oil (1/2 inch in pan)
    8 corn tortillas
    1 to 2 cups grated cheese

    I’m a recent widower that never cooked much. Since I’m not getting out much, I’ve started learning to cook again. Food delivery is terribly expensive.
    Ken, I am so happy to have found you here. Finding recipes for for one or two has been a challenge. Your recipes are easy, quick and good. Thanks for the help and confidence you have given me.

    These sound so good and easy, love the tip for taco seasoning.
    My mouth is watering, my eyes are tearing up and my nose is running....but I'm in for these

    Another excellent video and cumin is that awesome ingredient which makes white chili & enchiladas the best .

      @@KenClick , Your welcome Ken & i will be trying to recruit more subs for your site, God Bless you & yours & thank you again for the work you do here to provide a family friendly site that i can rest assured to let my 2 grand daughters 3 & 6 to watch as i am teaching them to cook., btw, they are healthy eaters & will eat home cooked over fast food anyday, veggies, taters, meats, etc... their fave veggie is broccolli, lol truth.

    Great recipe. I make them non spicy. But I don’t use any oil on my tortillas. Just soft out of the package. I have a digestive problem with oil and fried. Thank you for sharing. 👍🌟❤️

    Really enjoyed your video. Will try this one for certain. Question for you about cooking your recipes while using camp & backpacking stoves. Could you please tell us what, if anything, you would adjust or do differently making them with camping cookware & camping stoves? I'm certain others would love knowing too.

      Umm... It's not practical to try and go through all my videos and what? Post on each one a new method other than the one shown in the video? Cooking while backpacking is very different. I have several videos on that already.

    Thanks, Ken, that looks interesting. Just one question, tho... what do you do with all that oil when you're finished? Small amounts of oil I wipe up with paper towels and throw in the trash, but I don't deep fry because I don't know how to dispose of used oil!

      @ Harold Norris, when deep frying, one rule is don't deep fry seafood & then other items in the same oil or it will all taste like seafood, & oil can be used more than once. For disposal, save your oil containers, the plastic bottles /jugs, when ready to dispose of, make sure you have let it cool to at least room temp, using a funnel, pour the cooled off oil thru the funnel back into the container & tighten the the lid, put it in your trash bag, do not pour down drains or down commode, i know, i know, but i've seen people do it, solidifies & clogs drains, hope that helps you friend. God Bless you & yours & stay safe.

      @@stevelogan5475 Thank you Steve! I hadn't considered putting it back in plastic bottles. I don't have metal cans because I don't drink coffee, so I just avoided the problem all together! Well, maybe I'll give this recipe a try then! :-)

      @@horrorislander you are welcome sir, just remember the key is let your oil cool down to room temp or it will melt the plastic container & leak all over, i'm 57, a bad experience from 40 years ago, lol, what a mess, lol.

      @@stevelogan5475 That's why I never considered plastic bottles before... though I feel pretty dumb right now. Oil can be poured out at room temp, so of course I could wait until it's back to room temp to pour it back. *smacks forehead* Seriously, thanks for the reply!

    I usually don't add salt to homemade seasoning mixtures just so I can get a good read on how much is needed once the dish has cooked a while. I give it a taste after everything has mingled and go from there. It's sometimes shocking how much salt there already is in the various ingredients of a recipe.
