They have to take the membrane off each onion ring before battering or breading it. Blanching the onion rings in water for 30 to 60 seconds helps release the membrane. When the membrane is left on and you batter to bread the onion rings when fried that’s what sticks to the coating and when you bite the fried onion rings that’s why you get the entire onion and left with hollow batter ring.

4:40 you can do that at home as well, cut the onion in rings and then soak them in cold water for some time and then peal off the membrane from the inner side of the ring and when you fry it with batter it won't come off after a bite. :)
