EGGLESS Orange Semolina Almond Cake Recipe | How to make Easy Gluten-Free Orange Almond Cake
| Ingredients (makes a 9-inch round cake) |
[ ] Semolina (Sooji): 165 grams or 1 cup [Note: Use Rice Semolina for a gluten free cake. Regular semolina is made with wheat and therefore contains gluten]
[ ] Orange Juice: 180 grams or ¾ cup
[ ] Almond Flour: 130 grams or 1 cup
[ ] Baking Powder 1½ tsp
[ ] Yogurt: 200 grams or ¾ cup
[ ] Butter: 115 grams or ½ cup
[ ] Sugar: 200 grams or 1 cup
[ ] Baking Soda: ½ tsp
[ ] Almond Slices: 30 grams (for decoration; optional)
* Add the orange juice to the semolina and set aside to soak for at least 30 minutes
* Preheat the oven at 170°C after 30 minutes are completed.
* In a separate bowl add the almond flour, baking powder and baking soda and whisk it all together and set aside.
* In a separate bowl add the butter and sugar and beat together until creamy. Add the yogurt and vanilla extract [optional add in: orange zest and orange extract] and mix until evenly combined.
* Add the soaked semolina and mix nicely.
* Add the dry ingredients and mix everything until a smooth batter is formed.
* Transfer the batter into a 9 inch round cake pan and smooth out the top.
* Sprinkle sliced almonds (optional) all over the top and bake in the preheated oven for 55-60 minutes or until cake is cooked through.

I just made this cake today! It’s absolutely delicious and measurements are all accurate. I added 1 and 1/4 cup sugar and it was enough sweetness. It is so moist and decadent. Would serve this at a party or bring it to a party. Thanks for a lovely recipe.
