Fortunately for me I don't drink coffee so this Ad is just soothing music and a bit of Alton Brown.
Now I need to see James Hoffmann analyze the impact of a taxidermy squirrel on a Chemex pour-over.
A Hoffmann reaction would be fun.

This man is one of the greatest cooking treasures and I'm glad I've been watching his shows for almost 20 years now or more. Im 25 and can remember watching the cooking channel with my grandma before I went to preschool
As a person who doesn't like coffee, you wouldn't think I would have just watched that whole thing, but here we are.

I remember as a kid, the coffee epidode of GE was one of the things that got me into coffee. Now, all these years later, still watching and taking care to respect and learn about coffee and tea. Thanks, Alton.

I loved watching Good Eats & enjoyed Alton very much...until this. If this were the 1st thing I'd seen of him, I might have written him off as unrealistic, spoiled, & out-of-touch. Who has a justifiable amount of time to spend like this? Personally, I can use the sleep.
As an auto detailer this kind of morning ritual soothes my brain. I will be doing it like this from now on.
I have tried a plethora of coffee in my time here on earth, and by far this is my favorite! I make mine in my French Press until I get everything for a pour over. Thank you for taking on the argues task of creating this masterpiece!

Aero press is great, but you can get a pour over “chemex” like device at Walmart for $20-30
I was a bit surprised when he went to empty the water from the mug and inadvertently revealed that it wasn't actually an endless void behind him.

Ditto! I set up my cold brew the evening before while I'm still functional!
When doing a pour over, I take the extra step of rinsing the filter with hot water to get some of the paper smell out of it. Try it, the paper smell in the water by itself is unmistakable. Dump it out and carry on. As a bonus, it pre-warms the Chemex.
It's not to remove the "paper smell" - it's to prevent the oils from the coffee being adsorbed onto the paper.

Love the dedication to craft and staying on-point and all with the precision and exactness of this method - but while all this is going on my press and I have wandered in, boiled the kettle, ground the beans, steeped the brew and are on the way out.

I just use a coffee maker with a "steal a cup" function and start the machine without the pot in it. Stand there (~30s) until the grounds are thoroughly soaked, then put the pot in and let it run.
I actually came up with this after watching the coffee episode on Good Eats forever and a day ago.
Always let the entire pot brew before pouring a cup, and always grind your beans just before use. Find a popular local roaster if you can, so that the beans are as fresh as possible.
Alton, I was about to say for someone as thorough as you, I’m quite surprised you left out (IMO) one of the most important steps to a great cup of coffee: filling your mug with hot water while the coffee brews. But then you did it and I felt all was right in the world.
Didn't Alton advocate lightly moistening the ground coffee a bit before adding the water to release CO2

Interesting that he didn't "wash" the paper filter, but he did bloom the coffee. I'm going to have to order me some of this blend.
French press cold brew is about as easy as it gets. Grind the coffee in the evening, let it steep overnight and bingo! Fresh coffee in the morning.

Stay with French Press, it is a much richer and deeper flavor.
You know how this is, but they've been saying the oils and fines are carcinogens, at least for the past few years. Might be a reason to switch.
I use a Ninja. It's not pourover. But it simulates it. The screen is not quite fine enough. You might like it, coming from french press. I switched to paper, due to the fines and oils. Great cup of coffee.

I just set up my Mr Coffee the night before. When I get up a 7 AM, there is coffee. This is waaaaayyyyy too much trouble when I'm trying to wake up.

Me too. I do worse though. I only make a pot every 2 or 3 days. Other days, I just microwave the cold coffee from the day before. I enjoy a fresh pot on the weekend, but most of the time, I'm just drinking it for the caffeine and it's too expensive to waste.

You probably aren't weighing and grinding your own beans, or paying attention to the ratio of beans to water. Which means you won't get a good/consistent cup of coffee unless you get one by mistake
If you add one thing to your routine, add a grinder. Ideally though you want to use them just after grinding. Stays far fresher as a bean. My advice is decent maker, expensive grinder. Even your mr coffee would be well served by a decent burr grinder. Far better flavor.

All the purists like me are going to say "oh no! he used tap water, didn't pre-wet the filter, didn't use the golden cup ratio, used too high of a water temp, let the grounds go dry while you were playing with squirrel" but you know what - you were having fun while making this and that's what makes it perfect. Remember, the golden cup is the cup you're drinking it out of - no matter how it was made :)
Pre-wetting the filter ---basic quantitative analysis.
Acutal purists, or rather people with modern knowledge of coffee, know that they're is no such things as "too high" a temp for most speicality coffee, nor a golden ratio.
@@Adam-vx6to actually, i can tell when i make a pour over at 210 on the kettle vs 205. i'll heat it to 210, rinse, then grind, and by that time, it's 205 when it starts the bloom. the golden ratio is what the taste buds prefer :)
@@morejelloplease Nothing that you said contracts my statement. I not saying there is one perfect temp, I'm saying that there is not a "too hot" for most modern specialty coffee.

i have had coffees where notes of cherry fall into the realm of "old library book smell" and honestly they're some of my favorites , having someone else independently describe it that way instills a lot of confidence that i'll like this blend

I feel like this is a "second pot" kind of process.
This takes entirely more time and energy than I would have early in the morning to do. I'm sure it tastes great, but I'm fine with my french press 2 minute tango and 10 minute steeping wait where I sit in a chair and contemplate why I'm up so freaking early.
it's really not much more work than a french press if you use a more appropriately sized chemex. you're basically taking the same actions
I think it's the pouring part that really got me. Pouring in stages like that forces me to have to stand over it the whole time. I'd rather just pour the hot water in and wait 10 minutes.
@@Malachi57 yeah i def get that. i brew 500ml every morning in one pour (plus a bloom) in my chemex
For a single cup drip coffee: tbe OXO Dripper auto-titrates the pour. It's a good idea to lift the 'reservoir' and stir the slurry @ ~2mins in but you don't have to. Takes a Melitta #2 filter (cheap). Costs less than $20. Recommended.
We all need a dash of old library book in our coffee!! I could smell it when he lifted the mug for his first sip. Mmmmmm…..

I never bother.
It is literally 1 trillion gazillion percent pointless. No one who understands science basics would bother.
Doing it makes a difference, but it’s not as big as you might think. I don’t, but do it if you want to.
@@jmurphy6011 not true, we've actually steeped filters ( like steeping tea ) & some filters release a very bad flavor, almost to the degree of chlorinated swimming pool water. Yes we used filtered water from a bottle!

Your coffee seriously has saved my mornings. The amounts you use are perfect for that punch in the face every morning....I wasn't using enough.
