Ingredients
maine lobsters
rock lobster tails
lemon wedges, optional
Instructions
Maine Lobster
1. Drop a live lobster into a large pot of heavily salted water. While the water comes to a boil, cut the rubber bands off the lobster claws.
2. Cook the lobster for about 7 minutes for the first pound and 3 minutes for each pound after. Remove them from the pot and submerge them in an ice bath so they don't overcook and become tough.
3. Make sure that the Lobster's tail is curled (which means it is safe to eat). After the lobster is cool enough to handle, you can start to take it apart.
4. Twist the tail apart from the body. Twist off the claws. Use a nutcracker or knife to release the meat in the claws. To remove the meat from the tail, remove the legs and cut along the underside of the tail with pair of kitchen shears.
5. Use a lobster pick to find extra meat in the legs and body cavity.
Rock Lobster Tails
1. Preheat the grill to medium high heat.
2. Place the tails on the grill for about 4 minutes and then turn and cook for about 2 minutes longer.
3. Stand the tails on end and cook for 2 minutes longer. Remove from the grill.
4. Cut the tail end off and cut along the underside with a pair of kitchen shears to release the meat.
5. Slice the meat on a bias and fan out on a plate. Serve with a side of melted butter. - Jak na to + styl

I love lobster and will probably end up watching this video again with store-bought lobster in hand, but the happy music mixed with the lobster going into the boiling water @ 0:50 is really bizarre and depressing.

Some people care to remove it and some don't. I typically make a shallow incision on the underside of the tail to release it.

I have heard that boiling them live is inhumane, and that cutting down the middle of the head to kill is more humane. I am not sure how true it is. I have never bought a live lobster, any thoughts. I am not being rude, just wondering :)
its definitely true but some people dont like boiling it after it has a slice in the head because juices go out and water goes in the lobster therefor taking away a lot of the flavor
You kill the lobster before you boil it. Anything else is inhumane...! And to preserve the juices you simply use the water coming out of the lobster, mix it with melted butter and pour on the lobster when halfed. Easy as that.

At last, someone who knows the rubber band should be removed and remembers to do so, thank you so much! I am so envious of the wealth of wonderful and AVAILABLE wonderful Lobster and just about every fish for popular eating is there for those who want to go and get some for dinner or a snack.
Love your simple way to do this wonderful animal, Just wish I knew where I could get them here in London England UK, I am an invalid have no family or friends, and find it next to impossible to find these through the post in the UK. I am going on the taste I one time had a single half a lobster tail which was £44.00 in a pretty but otherwise plain Restaurant, I think they saw me coming and stung me hard!
Many thanks for this upload. We have a Fish Market in London England UK but trying to get any lobster tails sent through the post is just impossible! They should be ashamed, all they deal with is the trade and cash! So finding any to kook is not easy which for a Country surrounded by ocean and criss crossed by rivers and lakes is the ultimate irony. I would love some but getting out anywhere is next to impossible for this invalid anyway!

It is best to freeze a live lobster, then cut down middle of head while it is frozen and numb, then boil.

They don't. You can kill them two ways, splitting them through the brain, or putting them in the freezer for 15-30 minutes before putting them in boiling water. I don't know why someone would cool them alive-it's a show of disrespect for the animal your eating.

well i f they are dead before cooking i would not recommend to eat them because organs get toxic after death really quickly.
I would recommend you kill them before cooking them. The taste doesn't usually differ, and there are a few ways you can do it that are quick and easy. Just don't leave it out after you've killed it-you'll get sick.
