Select the element you want to edit and take note of the name, sometimes a part of the element can be changed separately, like the grid head, in that case the name is inside the type properties of the object. Then in the Project Browser look for that family (the grid head and section head are in annotation symbols). Right click the family and select edit. This opens the family editor, make the changes you want and save it with the same name or a different one (your call). Click load into project. Now when you select the element you'll have another family to change it to. This is just the general idea to point you in the right direction. I hope it helps.
I do pretty much the same thing, I only go to the project menu “side bar with names of names of levels ext.” and search for family, under family you will find annotations, there you will find all the different default annotations like “section head, elevation head,”Also recommend doing this in a template file so its pre-loaded to every project.

For the chairs it would be better to create a 2d view with symbolic lines and define the visibility per view inside the family but I understand this is quicker and easier.

I'm new to Revit. How do you change the fill/hatch colour of a wall. When I go to "Edit Type", "Graphics" "Coarse Scale Fill Colour" and change it there nothing happens. What am I missing.
Coarse scale fill colour graphics only work if the detail level is set to 'Coarse'. You can find this setting at the bottom of the screen next to the view scale. These settings (and more) can also be found by hitting 'GD' on the keyboard. Best practice would be to customize the wall structure and/or use (view)filters eventually, but don't worry you'll get there ;). Good luck!
Now I have a question to all revit users: I encountered some so called 'smart' North arrow annotation symbols. 'Smart' means that I need to put in the value of deviation of project North and true North, into the arrow. Nothing smart about it. Wrong input means wrong arrow. Why make such a 'smart' annotation family while the deviations are set by the project GPS and deviation? The compass is at hand, by sunpath. Just turn a static North arrow in the proper direction. 'Smart' North symbols are like the old days drawing board. No effect on the sun settings, independant of the project deveation. What is the purpose of making such families?

I changed the cut wall line weight at "Visibility/Graphic", it didn't change at view, but it changed when I printed it, then I went to "Object Styles" to changed it, it didn't change at view either, then I went to "Visibility/Graphic in View" to change the cut line weight, it didn't changed, so i don't know where went wrong.

The parts you divide they will have a different option of material. or if you just need a different material on any face in modify there is paint face tool which can add different material on faces.
