Absolutely. I'm white but grew up in a black/hispanic/arabic neighborhood in Detroit, half my family is mixed and I get along with all walks of life. I don't dramatically change my personality or the way I talk necessarily but there are definitely different ways of communicating depending on who you're talking to. It just makes social interactions a lot easier if you know how to talk to people on their level lol
I think greeting like this with people who are clearly receptive to it is lovely. Makes them feel welcome and cared about and like you know who they are.

It's called convergence and pretty much everyone does it to varying degrees. Often it's a very small change, like the way certain letters sound or using specific words and subconsciously. Sometimes it's more noticeable. I could be wrong, but it's probably related to subconsciously copying movements and expression from people you like. If I remember correctly, people who are more open for new experiences/people or who are more empathic do it faster/to a bigger degree

This is a dumb example, but I live in Maine and a lot of people here (not everyone) have a certain accent and way of speaking. I generally speak in a typical american accent, but I can switch to a Maine accent easily and often do with people who speak that way.
