My mom would definitely add chopped garlic. She even save some for adding at the end! I think every taiwanese mom and grandma are claimed to cook the best bee hoon! lol

This is very similar to the recipe I am used to. Sometimes, I would also add shallot, garlic, onions to enhance that Taiwanese hometown flavor. Also, I would add white pepper, dark vinegarette, rice wine, etc to finish up.

I sometimes have Taiwanese fried rice noodles (台灣炒米粉) for breakfast on Sunday, since there is a Chinese style restaurant outside of my village, that my father buys it for the family.💖

Ah…been a minute since I made this! Great idea and meal for the ‘rents on Sunday. I like to make this vegetarian style..carrots, celery, mushrooms, chives, and eggs (I count egg as vegetarian approved)
I like to add hot sauce when I’m ready to eat.
Thanks for reminding me to this dish back on rotation!

The shitake mushrooms you use are much lighter in colour to the ones we get in the Chinese stores in Canada. Are the lighter ones different in flavour?
I love your dishes...they are simple yet very tasty in flavour!

I'm technically half Filipino but I'm not sure in what as I look and act solely like my father's side of the family. We call it pancit. Mom usually puts onion, garlic, ginger, carrots, and celery. She uses pork, chicken, beef, or shrimp. We season it with soy sauce. My favorite is the kind with calamansi added. I do the same and add whatever vegetables look good and I have on hand. I like every vegetable except beets and bitter melon. Lee and our autistic son Daniel are pickier. They don't like very many vegetables. I need to buy nearly all new kitchen items. We had to leave our old house quickly but our new property isn't quite ready for us to move to yet and we're staying in separate places. I'm at my mother's house. Lee doesn't like the drama here (I'm used to it since my mother, brother, and sister all have dramatic personalities; I have a calm one like our deceased father). Lee and Daniel are staying with a friend. I'm allergic to things at that friend's house and there's no space for me there anyway. I hope to get a job soon (only Lee can handle Daniel now that he's a teenager) so I can pay experts to finish the work needed to be done as they aren't Lee's preferred tasks. He's only fast at lawn care and repairing lawnmowers, weed eaters, and 4-wheelers. He's slow at everything else. We need to add an electrical meter, fix the water pump, repair the water well house, dig the sewer lines, and add a mailbox. Plus I want to replace all the furniture in my and Daniel's room to suit us. I need 3 five-drawer chests (one will hold my clothing, one will hold Daniel's, and the other will hold our towels and other household linens, one top will hold my printer, one will hold my computer, the other will hold my personal care items, hair accessories, and jewelry), a lingerie chest (hold my huge bras as I'm a 34J in UK sizing and a 34M in US sizing as well as my and Daniel's socks and underwear; the top will hold my sunrise alarm lamp), a bookshelf, and something for my DVD/gaming station. I'm debating between a sofa table and a small entertainment center. It needs to be able to hold my current video game consoles and any future ones. The best spot to swing my kettlebells is in front of the door so the station has to be between the closet and the only window in the room. I guess I wouldn't mind if it extends past the window since Daniel tends to break them and the window coverings. I also need two twin-sized beds. The only piece I already have is the nightstand my father chose. It has Filipino carvings on it. Daniel and I are both deep sleepers and he doesn't like sleeping in a room by himself. Lee is a light sleeper and even a change in temperature wakes him up so his bedroom is on the other side of the house from ours. Also, I want a commercial-size reflective mailbox as I regularly order from small businesses. I will upgrade it with a swing-away feature and have the pole also be reflective.

Watch some traditional Asian cooking, especially Chinese, they use a toooon of oil. I mean, the food is dripping with it
