CEBU, PHILIPPINES - Welcome to Cebu, the capital where you’ll find the best Filipino roast pig, better known as lechon. Today we’re going on an ultimate pig tour to eat the best lechon in the Philippines - maybe the entire world! It’s going to be a day of crispy skin, juicy pork, and the action is going to be insane!

Here are all the places we went in this Philippines street food tour:
Gogoes Lechon (goo.gl/maps/dkhyaPNKmyEjjwhu5) - First up is Gogoes lechon located north of Cebu. We arrived at 5 am to see the process of them roasting their lechon. They fill up the belly of the pig with sea salt and a combination of spices that includes ginger and especially green onions. The pigs roast for 3 - 4 hours, carefully being turned as they roast so the skin cooks and crispfies perfectly. It was sensational and a perfect way to start this ultimate Filipino lechon tour. (Price - they wouldn’t charge us)
Ruthy's Lechon (goo.gl/maps/mCwqJYFZiv73MgYQ7) - Next up we headed to Talisay, known as the birthplace of lechon, and where the original lechoneros come from. Stanly first took me to Ruthy’s one of the standards of lechon - packed and they fly through the pigs. We chopped up a 3 kilo belly section of the pig. The skin was insanely crispy, salty, and full of juicy green onions. Price - 2,940 pesos
Lolo Soy's Lechon House - Finally, one of the greatest lechon’s in all of the Philippines, Lolo Soy's Lechon House. They fly through pigs and they had already sold over 20 pigs by the time we arrived. The action is out of control! We ordered a kilo and they also gave us some of the feet, plus some of the blood stew. Price - 750 per kg, we had 1 kg
Paraz Native Lechon (goo.gl/maps/iTpyTW6znqGsyp7J8) - For our last stop on this ultimate Filipino lechon tour we drove down to Carcar, another famous lechon city. We went to Paraz Native Lechon where they sell over 50 pigs a day, and they use native natural pigs. The pigs are still roasted over coals using traditional bamboo skewers. They chop it up, it’s so insanely juicy and then they drizzle on the drippings with all the onions. Additionally, they are known for their chili vinegar, which is some of the best you’ll have anywhere.
This was one of the greatest days of eating pig in my lechon, Cebu lechon really is the king of roast pig!

I had the honor of experiencing Lechon in 1990 at a Philipino birthday party in Houston, Texas, USA back in 1991. The chef removed the head first, and then he carved the little piglet as if it were a loaf of bread. It tasted wonderful!

Our lechon in Puerto Rico is equally popular. The roadside places look similar, though nut so crowded. I think the big difference is that the lechon is not stuffed. Also, soy sauce is not used to baste, so the skin is not red. Philippines and Puerto Rico--lechon capitals of earth !

As long as the Lechon is tender, it’s good. Flavor varies from different provinces. Plus, the skin should be crispy with a texture as thin as the sugar glaze and is not hard to your gums. Most especially, juicy. No sauce needed. Just plain 90% lean, 10% skin and fat

There’s a big difference between rotisserie lechon vs oven cooked lechon. Rotisserie wins every time. The rotation helps spread the flavor all over the pig where as in the oven it just sits in the bottom of the pig’s stomach

Great content, Mark. I agree the Cebu region probably has the best-roasted lechon so far in the country where their dipping sauce (vinegar, soy sauce, onions, chili, etc...) differed from some other regions which use liver sauce (pork liver, vinegar, sugar, bread crumbs, onions, garlic, seasoning, etc) which is also very tasty. I prefer the regular vinegar + soy sauce + chili for my dip and I use the liver sauce to mix my rice :). Although the topic is roasted lechon, You (Mark) should have tasted the "Lechon Paksiw" which is just a left-over lechon cooked in vinegar, soy sauce, onions, laurel leaves, etc... where you don't need a Chef ...just regular Auntie or Grandma or any person who cooks adobo. Eat it with steamy evenly cooked rice and you will have a different experience.

Those "sea grapes" are available here in Arkansas supermarkets in a little jar and it looks like caviar, but is absolutely tasteless that way. I would love to try the fresh ones on the stems. The enzymes in the shredded papaya are necessary for proper and safe digestion of the pig. Substitute pineapple or kiwi for the enzymes.
The sea grapes are definitely way better fresh. They’re usually harvested in the morning and sold in markets that same day.

I bet those sea grapes are already limp, slimey, and popped. You definitely should try them fresh. It's so fun to pop them in your mouth.
We usually go during low tide to find those (molluscs and sea urchins as well), then find a sand bar or bunch of rocks to sit in, take out our rice, and dip those sea grapes on the spiced coconut vinegar dip we bring with us. There are spicy varieties of the sea grapes as well.
On It's own, sea grapes are actually kinda tasteless, but if you get them fresh from the sea, the taste the ocean enhances the flavor. Slimey but not the disgusting kind of slimey.
@@iagreewithyou3478 No. Neither limp, slimey, or popped. Not even salty! I think my problem is that I expected them to taste like seawater at least. But no.

Most of what I saw that's bottled/canned have already shriveled up haha I suggest just preparing a vinegar dip for it, with salt, sugar, garlic, chili, and onions. It really doesn't have much flavor on its own. Perfect side dish for grilled fish or meat.
