Have you ever steamed a chicken? Many many years ago I was watching the frugal Gourmet I think it was. He put a whole chicken in a pot and covered it with water. He added an onion cut I half, skins on, couple of table spoons of peppercorns and about s 1/4 cup of kosher salt. I think it was more salt but that is what I use. Anyway hdeboiled it for 15-20 minutes and immediately covered annd turned the heat off. He let it sit about 7 hours on the burner with heat off. Never open it. I tried it and have been doing it this way ever since. This is going on over thirty years now. It makes the most moist chicken I ever had. I would do two at a time and freeze some. Even after being frozen it was still moist. I have done it with Turkey also but you have to boil for 45 minutes instead. My eldest son never wanted to eat school lunches so I would make him chicken sandwiches or chicken salad, etc. I make them still to this day and freeze for him since he is so very busy these days. I save the broth now and strain through a tea towel. I did not do that before I just from it. I use that broth even though it is salty for certain things but use less salt as I cook what ever it is I am cooking. Doing chicken this way saves me so much time and have the ability to prepare food in a hurry. I even just put some in soups and it is never dry.

Hi Elizabeth, Something that I love to do is cook a whole chicken using the combo method of braising and poaching (poaching being similar to the steaming that you mentioned). I think this combo method - what Nigella Lawson calls "Praised Chicken" - a play on words combining poaching and braising - that really increases the flavor 10 fold. I show how I do it here: czcams.com/video/XKy5azID_p4/video.html Love, Mary

I buy those same things at Costco. Frozen organic fruit and veggies are a great buy too. Organic cereals, etc, they are selling more organic items all the time but you still need to check ingredients because sometimes they throw in things I don't want in my food. I find Trader joe's have good organic veggies when I want a smaller amount, they are usually cheaper than grocery stores. I know some people hate food shopping and are in and out fast, but I really enjoy grocery shopping (call me nuts). I'm so glad your videos cover such a wide variety of information. That's why I love you so much, you are part of my relaxation and info time. I mentioned a long time ago that I call it my "Mornings with Mary" . Thanks to you and God bless.

Hi Mary! I completely agree with you about buying whole chickens over fillets. I get a couple a month and because I live alone, 1 chicken lasts me up to a week. I have a roast dinner on the first day, chicken salad on the next, then either a risotto or chicken fried rice on the 3rd day. There's usually enough meat for midday sandwiches and I have the dripping and juices on toast for breakfast (it's an old fashioned north of England thing). The bones make stock for soup which will feed me for about 3 days, especially in winter when I put dumplings in and the cats have a meal on the scraps. All that for about £4. Thankfully, chicken is my absolute favourite meat😊

Ruta Maya is our favorite coffee. We get it from Costco in Duncanville up toward the DFW area, but we only pay about $15 vs $18 at HEB in Waxahachie. I also buy the Wild Planet Wild Caught tuna at Costco for about $15-16 for six cans while it’s close to $4 a can at HEB. So some nice savings at Costco. We also buy TP and paper towels there.

We went to Costco early this morning to try and beat the crowds, but it seems the crowds had the same idea LOL! It wasn't conducive to leisurely shopping, but I did grab the Ninja Air Fryer/toaster/dehydrator oven on sale. Our store still seems to be having trouble stocking the Kirkland brand items, or the demand might be really high and selling out before I can get them. I'll definitely keep my eyes peeled for some of these items!

I bet those "sprouted oats" would make a great healthy oat milk. Blend with filtered water. Strain and use the oats in baking or oatmeal. To the oat milk, add a pinch of sea salt and maybe a pinch of raw sugar to taste. After it sits and thickens, thin with more water to taste. Keep the "milk" in the fridge. Makes a nice, rich "coffee creamer" and it's great for cereal.

Here in San Diego, our Costco sells Chosen Foods Avocado Oil Mayonnaise. It tastes fantastic! I like Avocado oil mayo because I believe mayo made from soy oil or canola oil are not healthy. I try to buy organic, but avocados do not require a lot of chemicals to grow. They are on the EWG "Clean 15" list, and I don't worry that the Chosen Foods mayo is not made from organic avocados.
I generally don't buy Romaine hearts anywhere because it is the darker outer leaves that have the best nutrition. The hearts are not as dark and are about the color of nutrient void iceberg lettuce.
Costco sells local honey so they source and sell it regionally. My Costso sells local Southern California honey. This is beneficial especially to people who have pollen allergies, as eating pollen helps your body calm it's response to pollen you inhale. Local honey has the pollens you will likely inhale in your area.
Another reason to buy and eat Brazil nuts is that they are often wild gathered in the rainforests of Brazil, and consumer demand for a rainforest product helps encourage people to preserve rainforest instead of burning it down to grow row crops.
I brew ground cacao nibs into a delicious hot beverage that tastes of chocolate without the sugar.
I eat Keto and Costco's half gallon of organic whipping cream fits my diet.

If you get the organic chickens at Aldi's, they say they're free range and they also come with the neck and giblets inside of a bag. So you have the option to do whatever you want with those as well and the Aldi's here in Florida I see them going for about 2.50 a pound. I Do by the ones from Costco and they are a little bit cheaper per pound but they don't specify if their cage free or free range and they also don't come with the giblets but they are a great option!

Oh please a video on that duck preparation!!!!!
I will buy chicken once my farmer chicken is gone, but I only buy the frozen breasts then, easy to use, quick and one breast piece usually feeds 2 of us. Costco' cheese selection has really gone down, but I do get their sheep milk cheeses and imported ones, I dig for the smallest ones😁. Yup that canned salmon I got too, also their sardines, I watch when they go on sale😊 Never saw ghee there, but I make my own when I get lots of butter in my freezer. Butter from Costco when they put kerry gold on sale! I make my own jams as well, but their French berry jam is a winner.
I get the dried onions and garlic powder, for when I'm lazy or just want a little in a meal.
Coffe is a problem, they mostly carry dark roasts which we don't like.
Looks as if you have a much better organic selection in Texas!!! No large bags of any beans here. However I love the organic red beets, already cooked and vac-packed.
