The base of all curries requires onions too DJ. Do what you did, but in your oil, add 2-3 cardamom pods, a stick of cinnamon, a couple of cloves and a few peppercorns. It flavours the oil. Then add chopped onions and brown the hell out of them slowly. Add your ginger and garlic after and tinned or fresh tomatoes instead of puree. Omit the curry powder and add some garam masala if nothing else. The onions make a huge difference. Meat on the bone gives more flavour too. But if you dont like bones, then use thigh meat for more flavour. You could also just ask your butcher to give you some chicken bones if you dont like it on the bone. Chuck them in just for flavour and then remove them at the end.
spot on onions and tin tomatoes give the curry some body also some fresh chills for heat

@@DJsFoodTravels thank you sweet for sharing. Looked lovely xx 🙏🏻❤️
Looks delicious will definately try the receipe, love my curries, even cooked curries using slow cooker , yummy
Yay, my favourite!!!!😋😋❤
Indian here, we use a few more spices. Ground Coriander, Garum Masala. And use chicken thighs on the bone. Have to say if I was served that up, would be very happy to try it and it looks authentic. Would be even nicer with lamb on the bone, with the marrow adding extra flavour.
You are the masters of the curry craft. We are humble at your advice. Thank you.
Better made with mutton
@@leeallen8840 DJ did a very good job here.
Hi Indian 👋 Any advice on making a passsnda sauce? Used to be a favourite of mine in Scotland
@@ChandlerBinge Lamb Passanda isn't a dish made in my origin of India. So I can't help you there I am afraid. I am sure there are indian chefs on YT that will show you how its made.
That meal looked OTC, nice job!
Love a curry. Looks good mate ❤
Looks lush 😊
Great curry Darren, I use Fenugreek leaves, they add an authentic flavour.
Looked great DJ 😋😋
Looks yummy!
Gracias
Food looks fantastic . 😊
hope we get dj audits from new york n Thailand
Looks delicous
Looks tasty! I got kicked out by my parents when I was 15 [I deserved it]. Fifty one years later, and I'm still reaping the rewards of having to look after myself in the kitchen.
Catching up with some videos Darren. Wowee I'm pretty good at curries but im coming to your restaurant. I do love onions in my curry though.
Have to say l did enjoy this one. regards Doc
This looks off the chuffing charts DJ, definitely going to give this a crack, nice idea with the tumeric, good thing about a curry once you have the spices you can make various dishes at a reasonable cost, i used to hate ginger, canny do with out it now.
That looked amazing. Love a chicken madras 😋😊x
Another yummy homemade meal from our Darren ❤😊
Looks alot better than my effort of a homemade curry , cheers D.J.
Thanks!
Very kind
That meal looks very tasty I will give this a go you made it look so easy thanks majella Ireland
Good to see some home cooking with a nod to healthy ingredients. Sauce a bit thin but overall still looked a nice recipe.

Funny you should say that, have a chefs hat 😂😂
Absolutely amazing meal DJ..no more words needed....😋😋😋😋👏👏👏❤
That chicken madras
looks beautiful Darren 🤗❤️👍
Looks lovely that Darren👌🏼 Would you consider doing a review on the spice n tice curry kit? Its basically 3 curry kits Vindaloo, phaal and Carolina reaper. They are supposed to be really tasty from the videos ive seen. Heat wise i reckon you could handle it no problem 👌🏼
D.J ANOTHER AMAZING MEAL ENJOY LOOKS VERY TASTY...
Bloody hell DJ more money than sense. £9 for 2 organic fillets.
I know a few butchers who would love to charge them prices back here in Lancashire
Sorry I showed you 🙄🙄
He's making a mockery out of his viewers who are on a lower income tbh.....we get it dj you have cash, no need to show off!
Quality ingredients cost. Esp in London. If I'm gonna spend an hour in the kitchen cooking, then I wanna make sure I'm using quality. Not sure bout the rest of u.
Fabulous Curry! Chicken thigh meat takes it to another level!
As a 55 year old fella now living on my own, I really enjoy your home cooking vids Mr Darren John 👍🏻👍🏻 keep them coming cause there healthy and look of the charts good, or as my son would say - bang tidy👍🏻👍🏻😁😁😂
Looks lovely DJ fair play man 👍🏻🙂 personally I hate cooking and have no patience for it , but that looks great man.
🙏🏼🙂👍🏼
dont put yourself down mate you could cook this..its just a few pieces of chicken chucked in a pan with some spices and some rice..its not hard to do
@@Andy-rr6qf8qj8xI know m8 I just have very little patience when it comes to it its just not for me the cooking thing
Looking very yummy😋
Good work DJ nice food
Comfort food on a cold wet day.👍
Very nice, be nice to see your version of a King Prawn Jalfrezi (my absolute favourite)
Looking good mate👍🏼, wish I’d known you could do a Madras, as this time last year when prepping for the road trip I’d have maybe mentioned it🤷🏻♂️😂👍🏼.
😉🙏🏼😂
Mouthwatering! 🥰☀️🥰xxx
Thank you 😋
Will be trying that recipe at the weekend thank you for sharing DJ, paul @ angie
How did it turn out?
Nice one.
Perfect Madras, my favourite BIR curry.
That looked great DJ and i have learned a new spice fenugreek not heard of that i must be a philistine. keep them food audits coming. i do the same as you just guess the amount of what goes in and always add lots of fresh chillies.
So good
Well done sir
As a man that cooks that looks pretty damn good.
Chef of 23 years mate the coriander stalks are the best flavour trust use stalks in cooking leaves in garnishing
I prefer the texture
Looks good. Nice to see a CZcamsr eat something other than chicken tikka masala or korma, I think only you and Gary eats have the balls to eat spicy food.
Looked really nice that, gonna try your recipe but add around 2/3 onions blitzed up at the start.
It definitely needs 3 onions cooked very slow with ginger and garlic and then once they are properly cooked out then add the dry spices and cook them out to give a deep flavour then add the chicken and the spices will soak right into the meat then add the tomato paste and cook that out to sweeten it then if you are using chicken breast definitely add chicken stock so it replicates meat on the bone flavour now cook covered for hours the remove the lid if you want your sauce thicker, this method is the same for any curry I have never heard of a curry without onions
thank god darren miles better than the watch giveaways
Nice , love taste of madras but as on old git can’t take heat anymore so I add a bit of coconut milk to dilute it slightly but retain the full flavour .especially good with lamb and a few okra .
Man but that looks good.
Well, first off STOP taunting us all with that smells amazing 🤩 😅😅😅😅 it looks bloody amazing, love a madras, and the spicier the better 😊😊😊
I'll be around yours, I'll bring the beer. Waitrose sells Lost and Grounded Hells and Pilsner which goes well with a Ruby.
Looks great Darren, my recipe is slightly different but the taste that matters.
Hi Darren just made the curry but can't get amount of sauce you got I put in a sauce pan though 😊
Hi Darren its Helen. Your Hot Madras curry looks so Beautiful and easy to make, Thankyou 🎉 I'm going to have a go at your recipe. I love your music in your video. Sounds Thai music, ready for your Bangkok Thailand trip. Its sounds like the soundtrack to Beyond Rangoon 🍿 movie. My favourite movie. Have you ever seen it, Darren.
Schaut lecker aus! 😋 👍
Go Darren, let's hear it for the mark one eyeball method of cooking, Experience the best teacher. You can almost feel the cooking. And what a fantastic looking, man size portion on your plate.( i'm sure i shouldn't say that anymore) 😢❤Food that makes you smile. A fabulous video Darren, keep 'em coming mate. Allan&Family
Love food that makes you smile
Never known an Indian sauce not to have onions in it?
that looked the dogs knackers mate, can u do a chicken tikka masala
Looks the business Darren
When is your resturant open DJ?
I've bought the chicken for your tikka 😊 lavly jabbly 😂❤
Thank you that looked delicious.😋😛
Needed some onion bhajees aswell dj.
Looked amazing. I've screen shot ingredients.. this might seem stupid question to you .. but is pilau rice just rice with tumeric in .. .. 🙈
As you say "Hundreds of different versions of Chicken Madras". What however is the common characteristic of all of these versions that enable them to be called Chicken Madras ? I have asked this question quite often on different channels but have never received and answer.
What kind of chef were you DJ?
Looks lovely, I'm a girl who always orders a Vindaloo! Hope to welcome you here to the Isle of Man with your motorbike at some point 🎉
👍
It’s much easier to mix the tomato purée with water first, then throw it in.
Best to use fresh tomatoes or at least tinned instead
The problem with that is you need to cooked the paste out otherwise you are add raw paste instead of sweetening it and giving it depth plus no onions in that curry so totally wrong and he called it healthy when rapeseed oil is not healthy it’s terrible for you if he used ghee that’s healthier and tastes much better
Am the curry king haha
I would give that a go but with less chilli powder as I am not really into hot food
Definitely going to try this one it looked delicious. Thanks.
Your curry looks fantastic. It would seem you like me are a big home cook curry fan. Allow me to introduce you to a curry channel called the Balti Brothers, the Balti house Rishton. I've never bought a take out curry since discovering this channel. I hope you don't mind me recommend this channel to you. You have to share good things.
Nice looking homemade curry . Nice one.
Cheers Top Chef DJ - Just need some pickles and PAPADOMS to add to the final meal. I suppose if you accidentally tipped over a whole bowl of red hot chillies (or two), it becomes a PHALL? 😆 Truly amazing recipe... Uncle Ben's Rice would do the trick but we cannot use that name now I guess as the whole world has gone mad. These days I just microwave frozen rice and peas available from major supermarkets. Rice should not take your time.
Ive ordered some Punjabi Masala papadoms to try..have you ever eaten them? I like spicy ones so thought id give it a go.
