Looks awesome. Just so you know, I made the smoked salmon last night and it was 🔥. Two big slabs. Rubbed both with deez nuts. I lightly smoked them slowly over some post oak chips. Made a teriyaki sauce mixed with sweet soy sauce and teriyaki for one slab and the other made the maple glaze that you made. Let the sauce tack up on the fillets and pulled them at 120 degrees. My family tore it up. Matter of fact, I just finished some of the leftovers for lunch as well. Salmon stayed so moist. Good call.

Perfect timing after filling my freezer last month.
June 1st Red Snapper season in Texas. I’ll be trying this method with skin in one side soon. I’m sure this recipe will work well with Red Fish as well.

You should try mesquite charcoal for a little added flavor. I feel it compliments the taste of Red Snapper.

MEAT CHURCH, I love your rubs. Can you do a cook with some Old Bay rub? Maybe a little J.O. seasoning. Maryland native. They are great seafood seasonings. Would love to see what you can do with that. I ain't mad at it.

Love these videos! Just got a pellet grill and these videos have been great! Can you use the same pellet grill that you would use to smoke red meat for fish? I heard it's hard to get the fishyness out of the grill even after you clean it
