Ingredients:
1.5 pounds beef brisket
½ white onion, halved
3 cloves garlic
2 bay leaves
salt to taste
water to cover
3 small guajillo chile peppers, seeded and deveined
Sauce Ingredients below for stove top:
1 small ancho chile peppers, seeded and deveined
1.5 tablespoons white vinegar
3 whole cloves
2 whole allspice berries
¼ teaspoon ground black pepper
⅛ teaspoon dried oregano
1 teaspoon of chicken bouillon
⅛ teaspoon dried thyme
⅛ teaspoon cumin seeds
⅛ teaspoon ground ginger
1 pinch ground cinnamon
salt to taste
Directions:
Sear your beef brisket on all sides.
Place the brisket in a stovetop pressure cooker and all the ingredients
Cook for 1 hour 15 minutes
Once the pressure cooker is ready to
Remove brisket from the pressure cooker and set aside.
Strain the cooking liquid. Take what is in the strainer and add it to a blender plus 2 cups of the broth and reserve the rest..
Blend well and add salt to taste.
Place brisket and blended sauce in the pressure cooker pot and simmer it for 30 minutes on the stovetop slightly covered.
Remove from heat and serve!
For Stovetop:
Sear brisket on each side.
Add brisket to a pot with water to cover it add in the onion, 1 clove of garlic, bay leafs, guajillo peppers and salt to taste. Boil until meat is tender. Anywhere between 3 to 4 hours.
For making the sauce stove top:
Combine guajillo chile peppers and ancho chile peppers in a saucepan. Cover with water, bring to a boil, and cook for 5 minutes. Remove from heat and let stand in the hot water until softened, about 5 minutes and drain
Combine softened chile peppers, vinegar, garlic, cloves, allspice, black pepper, oregano, thyme, cumin, ginger, cinnamon and reserved 2 cups cooking liquid; blend until thick and very smooth.
Pour sauce into a pot over medium heat and season with salt.
Bring to a soft boil; reduce the heat to low. Stir in shredded beef, coating completely with sauce.
Cover pot and cook until flavors combine, at least 30 minutes. ]

Mine came out great, with slight alterations, I added a little cane sugar to it, not much about 1/4 cup. Along with Himalayan salt, as that's all I ever use because it's very healthy and sooo much better tasting. I also cooked a double batch to your size. I'm sure it will freeze well for later use.

I made this yesterday. I have my own recipe but mine didn't come out so juicy like this one. My mom due to the family chain of negligence never learned to cook so I am so thankful for CZcams recipes. And this one the meat comes out juicy and we were able to drink the consome. My sister just came to visit from Oregon to California and she loved the barbacoa everyone loved it so I will be keeping this recipe for my books. 👍

If you're going to be gone for half the day, a slow cooker will work as well.
How long would you say ?
@@charlynjordan5287 When I'm gone for a while, I usually have the slow cooker on for around 8 hours on the low setting. Meat comes out pretty tender. Searing it is optional if you want to do that but I typically don't.

That looks delicious! Question for you, what’s your go to sweetener that you use in your recipes?
Good recipe. 2 things I'd do a little different. I'd make a chicken broth and use that as a base. Also, id put it through a mesh strainer to get rid of little pieces of pulp. It'll give you a little more silky texture especially if your blender isn't the greatest.

Some blenders do a really good job at blending everything where you don’t need to put it through a mesh strainer.
